With a blend of pride and nostalgia, I announce my resignation as the founding Executive Chef of Elsie’s Table. Crafting culinary experiences with this remarkable team has been an honor beyond words. As I step back, my heart (and wine glass, of course) brims with unforgettable flavors, cherished memories, and the pursuit of gastronomic excellence.
From the beginning, it was Renee's vision to create a world-class culinary tribute in honor of her grandmother, Elsie. Don's craftsmanship built and gave life to our cozy space, while I poured my heart and soul into curating seasonal menus, sharing my best recipes, building operations, and nurturing your restaurant from its inception. Jane, your marketing skill and design flair have left an indelible mark on our journey—your "Wicked Bites" day remains the highlight and pinnacle of our success. I fulfilled my goal of delivering, for three great business minds, their first entry into the foodservice industry with a complete turn-key 5-star restaurant. I have every confidence in the continued success of Elsie’s Table.
To the ownership team, I extend my deepest gratitude for entrusting me with your mission. Your unwavering support and trust fueled our success, as evidenced by the rave 5-star reviews and solid bookings that lit our path. I am humbled by the opportunity to have shared my passion for food and wine pairings with you and our beloved guests.
As I left the kitchen after a 15-hour Mother’s Day sendoff, I cry a lot with gratitude for the camaraderie, hard work, and shared triumphs with the incredible team at Elsie’s Table. Your professional dedication, always business first and support have been the foundation of our achievements.
While I close this chapter, I carry with me the invaluable lessons learned, friendships forged, and flavors shared. My love for culinary artistry will forever burn brightly within me. As I embark on new adventures, I am filled with excitement and optimism for the future.
To our loyal patrons, thank you for joining me on my never-ending gastronomic journey. Your enthusiasm and feedback have been the driving force behind my creativity and commitment to excellence. It has been a privilege to share my own signature family recipes from my restaurants in Brazil, and it has been an honor to bring a taste of my culinary heritage to your tables.
Stay tuned for my next culinary adventures in 2024! With 23 years of culinary expertise, a tier 3 sommelier certification, and a passport stamped with culinary adventures from 30 countries, the journey continues. Our latest travel through New Orleans served as a poignant reminder of the universality of food and its power to unite. I could feel the Brazilian Feijoada in our Louisiana Gumbo! As we enjoyed a quiet afternoon balcony over Bourbon St., I knew it was time to chart a new adventure course. A wave of peace embraced me, and just then, I noticed the fresh mint growing in the flower box next to me—of course, a new recipe begins.
With heartfelt appreciation, it’s a world of culinary adventures out here. Elsie’s Table, I am always here for you. Canton, Mass, My work here is done…Love you all a lot!
