Dinner time! Just kept it simple with some shrimp tacos. Just freshly made tortillas, marinated chili lime shrimp and cilantro and onion. Just squeezed a little lime on top and they were delicious! Now that that life is slowing down a little bit, going to get back to some fun cooking!

More smoked salmon! This time I did a cold smoked salmon. Cured the salmon over night then smoked it for 8 hours. Put a light coat of my sweet bourbon BBQ sauce on it the last hour. Going to wrap it tight and let it rest in the fridge over night to let the smoked really get in to the salmon.

Smoked prime rib for Christmas Eve! After trimming up this roast, I rendered all the fat that was removed and in crusted the prime rib with the rendered fat mixed with a merlot wine. Let it rest over night and put it on the smoker. Smoked it for about 5 hours. Turned out so juicy and tender! I like my prime rib on the rare side.

First try at a smoked turkey and cheese “croissant”. I used a smoked turkey and then tried a few kinds of cheese. I tried Gruyère, provolone and a smoked Gouda. I definitely think the smoked Gouda was my favorite. I also did a jalapeño and extra sharp cheddar. Put an egg wash on before I baked them to get that nice golden color, then topped them with salt. Definitely will be making these again.

Made some spaghetti with a homemade marinara sauce with some garlic bread. I also tried to make some cheddar jalapeño biscuits with a sausage gravy. The flavor or the biscuits were amazing even though they flattened out a little bit.

Just some quick biscuits for breakfast. Really trying to expand on my cooking abilities and step out of my comfort zone. Baking has always been a weak skill of mine. Mainly because I hate measuring things out and cooking with someone else’s recipes. I’ve always hated the idea of making something that wasn’t my own creation. Even when I ask for help on a recipe I have always changed it to fit my style of cooking and to make it my own. But you just can’t do that with baking! Glad I have a sister who is a baker, because if I didn’t I’d be buying biscuits from the store!

I’m back friends! Made the move to AZ and finally had time to get some meat on my . made some jalapeño poppers and some smoked chicken that I brined over night then glazed with a bone made smoked BBQ sauce! Looking forward to the warm weather and sunshine!
