I know the name says " BBQ and Tex-Mex", but we can get fancy too!
Our charcuterie grazing tables have been picking up a lot of steam lately. We have quite a few lined in the near future for some grand openings and holiday party's .

I know one of us looks like a roughneck hillbilly and the other is a teenage dirtbag , but I assure you, we bring nothing but class to the grazing table!

Are they cheap ? No
Do they get eaten faster than the time it takes to build them? Always!
Will you make your friends jealous ? Yes.

This past weekend was a hectic one for us! We catered 4 events and fed over 425 people In less than 48 hours. This little business of ours is doing bigger and bigger things everyday. This weekend was a true test for us and we crushed it .
It started with a golf tournament for Troy Area Chamber of Commerce on Friday afternoon , we followed that up with a wedding rehearsal dinner at The Lodge at Boulder Lake on Friday night .
Saturday , we had a charcuterie grazing table to build back at the Lodge for a cocktail hour and followed that up by slanging BBQ at another golf tournament. This time for the St Joseph's Men's Club at the Missouri Bluff's Golf Club.
Sunday was a welcome sight to get everything cleaned up ,organized and just relax.

Welcome to the swamp! It was a little hot in front of the grill last night. My son said "Your shirt looks wet" and then I turned around and he said " OH! ... you want me to get you a beer? "

I have been feeling really grateful for this life lately, even more than normal. We have had some amazing events with great people in the last few weeks and it makes you remember why you love doing this, even when it's 100° outside .

As our business continues to grow , we have to grow our arsenal of cooking weapons to keep up with feeding the masses. So I present to you the newest weapon, the Cowboy Coffin Cooker . A 5' long grill / open fire cooker! Oh the things it will do! 🥩

Speaking of growing business, I know its only the 1st of August , and you are busy enjoying the summer heat. However , the holidays will be here before you know it and you will call us last minute for catering and we will be all booked up and your entire holiday will be ruined and your family will hate you ! 😳

We may be a small business, but we are highly sought after in the month of December.
So plan ahead and get on the books now for your Christmas parties and family gatherings.

Disclaimer: We also enjoy the holidays and some of our family, so we do not cater Christmas Eve or Christmas Day!

Not all catering events are created equal .
We had a busy weekend catering 3 different events in two days!
Our Saturday night event was a hot one , as you can see by my shirt! However, it was a party !!! They had a Dj , food truck( us) and a fireworks display that beats most city displays. All in all , an exhausting, but great weekend !

The good thing with our tacos is , you can enjoy them in public and not be worried about losing your job or getting a divorce. 😬

We made it back from the Lonestar state Friday night and went straight back to the grind early Saturday morning . We catered a full service grad party in what felt like Texas heat and followed that up Sunday by catering a company picnic for Going Green Restoration.

You too , can hit the easy button on your next event and let us take care of the food for you!
Let's be honest nobody wants to be out grillin in 100° weather, not even us.
But we do it for you. 😂

It feels surreal to say, but yesterday marked our 2-year anniversary! What began as sort of a joke has transformed into a thriving business venture. Over the last year, we've leveled up in ways we never imagined, refining our processes and constantly improving with every event we take on.

As we head into Year 3, we’re not slowing down! We’ve got a brand-new chicken grill 🔥 and another smoker on the way to keep serving up that next-level flavor you all know and love. Stay tuned for bigger, bolder, and more creative ways we’re going to elevate your catering experience. We’re just getting started, and the best is yet to come! 💪

A huge THANK YOU to everyone who’s supported us so far, whether you’ve trusted us for your first event or are back for more. We wouldn’t be here without you, and we can’t wait to continue this journey together!

Last weekend was all about 🌮🌮🌮

We made enough meat , toppings and sides for over 550 tacos in 3 days. We had two grad parties and the monthly meeting for the Troy Area Chamber of Commerce and they all chose tacos! It was a busy 3 days.

To all of you sleeping on the shrimp tacos , we added shrimp for the Chamber meeting and it was the first thing gone , as always!

We left the business to the kids this weekend and headed out of town. They had two catering drop offs to do and one even required set up . By the sounds of it, they crushed it.
Si, even took it in to his own hands and made all the sides on his own! It's a good feeling to know that all this training and work on these kids isnt going to waste!

Now it's time to get them some hours on the smoker! 🥩
