Try our marinated flank steak! Marinate a 2 pound flank steak with 2 tablespoons soy sauce, 2 tablespoons brown sugar, 1 teaspoon each of paprika, ground cumin, oregano, and chili powder, 1/2 teaspoon cayenne pepper, juice of 2 limes, 2 tablespoons minced cilantro, and 3 cloves minced garlic. Mix the marinade ingredients together and pour over the steak. Seal in a plastic bag or airtight container and marinate for at least one hour up to overnight. When ready to cook the steak, bring a cast iron grill pan to high heat and add a layer of canola oil. Sear the steak on one side for 2-3 minutes or until nicely browned. Flip the steak once and sear for another 2-3 minutes. Turn off the heat and let the steak continue to cook about an additional 10 minutes. Check for doneness. For rare, the steak should be 120 degrees F; for medium-rare, 125 degrees F. Cut the steak against the grain and add to burritos or fajitas!

In a saucepan on medium heat add 1/4 cup distilled vinegar, 1/4 cup water, 1-1/2 teaspoons sugar, and 1/2 teaspoon salt until the sugar and salt are dissolved. Allow the mixture to come to room temperature. Place sliced radishes in a glass container and pour the vinegar mixture over them. Add a teaspoon of peppercorns (optional), cover, and refrigerate. The pickled radishes will be tasty in just an hour but are best after 8 hours. Enjoy these delightful pickled radishes on tacos, salads, burgers, grain bowls, or nachos! Quick pickled radishes can be stored in the refrigerator for up to 2 weeks.
