With a new, fresh approach to the culinary scene in Snohomish County and the Greater Seattle Area, Chef Cody Castiglia has embarked on a new adventure, bringing the tastes of the season to residents and visitors alike.
Working with local farmers and producers, Castiglia and the Della Terra crew are committed to sourcing the majority of their ingredients within the community, presenting a true farm-to-table dining experience. Operating out of downtown Snohomish has been an opportunity to partner with area businesses from ranchers to bakers, as well as with many programs that give back in Snohomish and King Counties, specifically in the areas of hunger, homelessness, and organizations that support local sustainable farming, as Castiglia believes that small business is best used as a vessel to meet the needs of the local community.
Della Terra, Castiglia’s business umbrella, represents his catering venture along with his cooking class and pop up dinner programs. Meaning “from the earth”, Della Terra stays true to the philosophy of using the best ingredients available from the local harvest. “This allows us to be creative with the vast bounty we have available in the Northwest resulting in better tasting and better-for-you food that benefits the environment and the local economy,” he said.
Castiglia recently signed the lease on a kitchen in Snohomish at 113 Ave C (formerly the Hungry Pelican restaurant), which is home to their catering kitchen, as well as in-house events such as hands-on cooking classes and pop up dinners. Castiglia and his team are gradually converting the space to fit the image and branding for Della Terra, which will include vintage inspired Italian glassware, locally crafted farmhouse tables, pieces from local Snohomish shops, and a Tuscan style courtyard and herb garden.
Rooted in the “Slow Food Movement”, which started in Torino, Italy, Della Terra is all about creating opportunities to share real, homemade food around the table with loved ones. Della Terra brings a truly local and seasonal dining experience with warm hospitality to groups of all sizes through their catering for weddings, corporate events, and other celebrations. Guests can choose from Chef Cody’s sample menus, or allow Della Terra’s chefs to custom create a menu based on individual tastes, vision, and budget. Della Terra serves Snohomish County, the Eastside, and Greater Seattle area and has openings throughout 2019 for catering needs.
Don’t have an upcoming event that needs catering services? You can still savor the local flavors with the Della Terra team during one of their pop-up dinners at their kitchen in Snohomish. Their multi-course, chef’s tasting dinners feature the finest and freshest ingredients of the moment, culminating in menus of carefully created dishes, perfectly paired with locally sourced beverages. The brand new spring 2019 lineup includes collaborations with a diverse dream team of other chefs, cookbook authors, winemakers, cheesemakers and more. Della Terra’s popular winemaker series features Washington winemakers, pouring the wines they have made themselves, paired with hyper-local menus featuring the best of the local Northwest harvest.
Additionally, Chef Cody has recently launched a fresh sheet of spring 2019 cooking classes at their Snohomish kitchen, feature a line-up of chef instructors with a diverse range of experiences and education to bring to the table. “Our mission is to create a sense of community, and to empower our guests to cook real food at home using local and seasonal ingredients. Featuring recipes that are easy to replicate at home, the classes are hands-on, fun, and engaging,” Castiglia added. Cooking class guests take with them not only recipes, but techniques and confidence to create fresh, seasonal dishes at home. Classes are typically held Sundays, Mondays, and Tuesdays and Spring 2019 topics include handmade pasta, knife skills, cheesemaking, foraging, and baking with local flours.

About Chef Cody Castiglia
Della Terra Chef/Owner Cody Castiglia was practically born in the kitchen, growing up in a family of chefs, restaurateurs, and foodies in Western New York, then went on to earn degrees in culinary arts and hotel and restaurant management. Castiglia honed his skills at some of the top hotels and restaurants in Dallas, Park City, New York City, and now Seattle. Drawing from his experiences working in high-volume hotels and restaurants, as well as intimate, chef-driven, James Beard Award-recognized restaurants, Castiglia aims to merge these experiences with his own flavors and creations, providing truly farm-to-table dining and warm hospitality to groups of all sizes with Della Terra. Like any good story, Cody’s westward expansion is a love story, as he moved to the Seattle area two years ago to be with his (now wife) Lia, a Woodinville native. They have found their dream town in Snohomish, where they love the vintage feel, quaint historic homes, lush country landscape, and of course, the abundance of local, organic farms.
