During these uncertain times, we are forced to stay in and cook our own meals to survive. This can be a great opportunity to get creative and have some fun from home!

A few tips for creating tasty authentic meals at home:

- Use your most perishable items first. In this case I used fresh arugula, cherry tomatoes, parsley and goat cheese
- Use some non perishable goods you have been squirreling away in your pantry. You know that 1/3 of a box of penne you have been saving for that rainy day? Use that. I also used some anchovies and smoked olive oil for depth of flavor and heart health.

- Use some citrus to lighten it up and get some vitamin C. Lemons have a decent shelf life so use them when you can. A little squeeze of lemon and this yummy pasta dish is complete.

Dropping new menus this week! Our sexy version of “Chicken & Waffles” has whipped chive creme fraiche and bacon maple syrup. We had a guest staying with us this morning from Nashville, Tennessee. He said he couldn’t find fried chicken that superb back home. Huge feather in our cap! Thank you for the love! And come stay , our gourmet two course breakfast is included in your stay! I’m the assistant Chef and love cooking for guests that travel from all over the country to stay with us. &waffles country 🔪

The main course from our chef collection dinner last night. Grilled flank steak with spicy chimichurri, buttery seared fingerling potatoes and fresh sage flowers. We had the ultimate pleasure of cooking a chef collection dinner for a lovely group of couples last night . The property is absolutely stunning tucked up in the hills in Calistoga. We were giddy with excitement as we were driving up! The kitchen was beautiful, the weather was perfect and the menu was fresh and seasonal! The first course was an avocado and Watmaugh strawberry salad with baby spinach, Laura Chenel goat cheese, toasted almonds and nasturtium from our garden. Balsamic reduction drizzled table side. The guests loved it!

Felt like a light vegetarian dish for dinner without having to go to the store. The result was simple but deeply satisfying! Turmeric rice with toasted almond and spinach pistou, avocado and red onion. This will be a perfect side to accompany a beautifully cooked piece of fish. Delicious!

What am I looking at, you might ask? Roasted chicken with paper thin slices of potato delicately tucked under the skin. Surrounded by a bed of sweet potatoes, garlic, lemon, onions and roasted in the cast iron. It was juicy. It was delicious.
