Another brilliant dining experience brought to you by Sonoma from Scratch! It was a dinner party for 10 lovely guests visiting from Raleigh and they couldn’t have been more fun! They shared a glass of their Cade Cabernet Sauvignon Jeroboam with us. They polished off the entire beast at dinner, six bottles worth of wine! I like how they roll! Our oven roasted pork ribs were to die for last night! Marinated in bourbon and Lil Sumpin’, rubbed with a Smokey Spicy lemony concoction and then slathered in mustard based bbq sauce.... Holy delicious! They could not have turned out more perfect! Fall off the bone flavor bombs. As Kramer from Seinfeld once said, “You don’t sell the steak, you sell the sizzle.” If this sizzling roasted chicken straight from the oven doesn’t sell you... I guess you must be a vegetarian 😆🐔🥗 But if you are a chicken lover, this is one of the best birds I’ve ever cooked. Here’s a quick simple recipe for the roasted chicken.
You will need:
3-4 pound fryer chicken, legs tied with kitchen twine
1 large sweet potato
7-10 cloves whole garlic
2-3 tsp minced rosemary plus 2-3 sprigs for the cavity
1 yellow onion, half quartered, half thinly sliced.

salt & pepper
Olive oil
2 Tbsp of butter, melted and slightly cooled.

• Rinse and pat chicken dry, place on plate. Salt that little naked bird generously both inside and out. Let rest for an hour to allow the salt to penetrate
• stuff cavity with sprigs of Rosemary and pieces of quartered onion
• Slice sweet potato into quarter inch pieces. If using a mandolin, watch those fingies!
• Toss potato with melted butter, sprinkle of salt and tsp of chopped rosemary
Now it’s cook time!
• Preheat oven to 425. Place 12 inch cast-iron skillet in oven while it is preheating.
• Pat chicken dry and rub with minced rosemary, garlic powder and freshly crushed black pepper
• Remove skillet from hot oven and drizzle with olive oil. Add chicken and surround the bird with sliced sweet potatoes.
• roast for 35 minutes and then sprinkle the whole cloves of garlic and sliced onions over the sweet potatoes. Put back in the oven for another 20 minutes
• Total cook time should be 55 mins. Remove from oven and check internal temperature, should be 155 degrees, will climb to 165 degrees as it rests in the skillet for another 20 mins- if you can stand to wait that long! The delicious aromas in the kitchen will have you drooling and ravenous!
