Here's a Turkey Day tip. Spatchcocking your Bird? If you did , cook your turkey upside down (breast side) to retain the juices in the meat. When you get close to finish temp, Flip over and crank the heat to crisp the skin.

With beef prices up, you guys are missing out. 19lb Costco Brisket, yielded 10lb ground up. Vac sealed into 1lb. packages, just under $5 per lb.
