Here is a little home dinner inspiration for yall!
Arugula
Roasted Sweet Potato
Boiled or Roasted Beets
Roasted Chicken Breast
Fresh Burrata
Pumpkin Seed Pesto
Heat oven to 400F. Scrub and boil trimmed beets for 40 minutes. (If you prefer them roasted go for it). While they are cooking season the chicken with oregano, salt, pepper and red pepper flakes. Chop the sweet potatoes and season with cumin, chili powder salt, pepper and avocado oil. Place chicken and sweet potatoes on a large baking sheet. Roast 20-30 minutes depending on thickness of the chicken breast. Internal temp 165F. Rest for 2-3 minutes then slice.
Pumpkin seed pesto: 1 bunch basil, 2. Tbs Parmesan, 1 garlic clove, 1/4 cup pumpkin seeds and 1/3-1/2 cup good olive oil. Place in food processor until smooth.
Place arugula, sweet potatoes, and beets on a plate. Top with sliced chicken, pulled burrata and pesto.
This may be my new favorite combo.
