Layered pumpkin with coconut crème, green curry, pickled fennel and crispy pumpkin

citrus cured cauliflower with charred onions, celery juice, peppers with fried cauliflower, lime aioli, salsa rojo and cilantro
Foie Gras Mousse
pan roasted brioche topped with roasted pineapple, duck mousse & candied peppercorn sauce
