Is Sourdough Bread Gluten-Free? The Answer: Yes, and Well, No.
Sourdough can be gluten-free if the starter and loaves of bread are made with gluten-free flour.
Regular sourdough, on the other hand, is more complicated. The fermentation process that makes sourdough bread "sour" also breaks down the flour, making the gluten easier to digest for some individuals with gluten-sensitive stomachs.
In short, sourdough can be gluten-free with the right starter and flour, but it often contains gluten, albeit in a more digestible form due to fermentation.
Considerations for Gluten-Sensitive Individuals:
The longer the loaf is left to rise, the more time the bacteria has to break down the gluten. The type of flour used significantly impacts digestibility (Einkorn flour, an ancient grain, offers health benefits and easier digestion).
