Learn about the many layers of thought and flavors beyond the beauty of this first course Delicata Squash with Ginger-Tomato Jam, Cilantro Vegan Coconut Yogurt, Toasted Cashews, Lime Vinaigrette, and Herb Salad. Our Executive Chef Ethan Paige says, "For this delicata squash dish, prepared at the peak of ripeness, global ideas mingle with local ingredients. I drew inspiration from cookbook trends, familiar flavors from our own backyards, and delicious, healthy, wholesome components. The ginger tomato jam delivers sweet, hot, and savory flavors. By deeply caramelizing the tomatoes with a paste of red jalapeño peppers, demerara sugar, and fresh ginger, we developed rich, concentrated umami. The coconut vegan yogurt cools your palate while lending subtle creaminess with a hint of acidity. The crunch of the cashews play off the capsaicin in the chili and nutty earthiness of the seared, roasted squash. Cilantro serves as a fresh, herbal counterpoint, complementing the interplay of a chutney-like jam with yogurt and nuts."

It’s time to shift into afterparty mode when our Late-Night Mini Cocktails arrive. 💃🏽🪩🕺 This trio of Mini S’more, Espresso, and Pumpkin Pie Martinis walk the delicious line between satisfying your desire for something slightly sweet and whetting your appetite for a perfectly paired dessert course. At under two ounces, each mini is intentionally sized to sip-quick-and-party-on, or if you so choose, to sample the entire trio. This slopeside season has us looking at our Cream Puff Tarts in a whole new light. ⛷️❄️ Beneath each delicately colored white chocolate shell hides a meringue topping dolloped onto one of two flavors—raspberry or Nutella (which, of course, we always love to switch up to accommodate your unique tastes). Our pastry chef’s final touch—one tiny edible flower at the peak of each puff—completes that distinctly alpine feeling, and has us dreaming of the eventual spring thaw. 🏔️🌸 (But ask us in June what this makes us think of and we’ll probably say a soft-serve cone...which is just another reason why this gorgeous, customizable sweet is ideal to enjoy year-round.) ❄️🌸🍦😋✨

What a year this has been! As we reflect on the past twelve months, there are so many peak moments we are grateful for.
