What are Graft to Glass ciders? 🍎 ➡️
Making a better cider is what we’ve strived to do since day one at the farm. Starting by grafting (propagating new apples trees) less known cider apples, some never grown commercially in Northern Michigan to find the ideal apples for making world class cider. Thomas Jefferson’s favorite apple Esopus Spitzenburg to the famous Kingston Black apple are some of the varieties grown in our orchard for this purpose. But grafting is just the beginning of the Graft to Glass process…
Pruning the apple trees is a yearly task (during the winter months when the trees are dormant), each cut serves a specific purpose—to open up the canopy, remove diseased branches, or simply making it easier to pick the apples. If Mother Nature cooperates, a healthy bloom in the orchard follows, and with a little help from our bee friends…a bountiful harvest. Each apple harvested is handpicked by our small but mighty harvest crew, ensuring only the ripest and best fruit goes through our belt press.
Once the juice is extracted from the apples, the process of yeast converting the sugars to alcohol during fermentation begins. Some ciders take 4-6 weeks on average; ice cider up to 8-12 weeks; and other barrel aged ciders will take years before they’re ready for bottling. Once filtered and carbonated (some ciders are still, and considered apple wine) the ciders are canned at our production facility on the farm. This entire process is done at the farm.

Bacon Wrapped Dates 🥓
Ingredients
- 1 lb.-Pitted Dates
- 1 package-Sliced Bacon
- 8 oz. Smoked Cheddar cut into matchsticks
- Fresh Basil (optional)
Gastrique
- 1 cup Red Wine
- 1/2 cup Sugar
- Rosemary Sprig
- 2 Garlic Cloves
- Course Black Pepper
Directions
1. Simmer all the ingredients for the Gastrique until thick and has a syrupy consistency, let cool.
2. Put 1 basil leaf (if using), and 1 piece smoked cheddar inside of the date.
3. Cut bacon in half and wrap each date with ½ a piece of bacon, set aside.
4. Line a tray with parchment and arrange dates neatly, bake for 20-30 minutes at 350 until the bacon has rendered and has begun to crisp up.
5. Lather some gastrique on the dates and put them back into the oven for another 5 minutes.
6. Repeat this step if desired, otherwise serve warm with a drizzle of gastrique on the plate.
Squash & Chipotle Dip 🫕
Ingredients
- 2-3 Delicata Squash depending on size
- 1 teaspoon Smoked Paprika
- 1 cup Mayo 1 cup Sour Cream
- 1 can Chipotle in Adobo 1-2 Cloves
- Garlic Salt to taste
Directions
1. Cut the squash in half, discard the seeds, cut into half circle moons about ¼- ½ inch thick.
2. Season with salt, pepper, smoked paprika, and a drizzle of olive oil (or neutral cooking oil).
3. Roast squash on a parchment lined sheet tray at 425 F for 15-30 minutes. It will have a bit of color and should be tender. Let cool to room temperature.
4. Mix Sour cream, Mayo, 1-2 Chipotle peppers or more if you like it spicy, 1-2 T of the adobo liquid, and 1 clove of garlic. Blend with an immersion blender or in a food processor until blended well. Season with salt to your desired taste level, also and more peppers if you like it hot!
5. Serve squash alongside the chipotle dipping sauce. Both squash and dip can be made ahead of time, just pull the squash from the fridge to temper for at least a half an ho

First batch of brandy from the farm is officially bottled 🍎 🥃
Aged 4 years in barrel, made from a blend of French, English, and American cider apples. Many used in the traditional apple brandy known as Calvados, originating in Normandy and Brittany.
Stay tuned for the official release. Club members get first dibs on this beverage and all new releases.
