Gm, last night was another amazing private dinner. The theme was an Elevated Diner Experience. Think of your famous diner foods but elevated to a more elegant level. BOOK US!!! You won't be disappointed 😁😁







-Roast tenderloin with potato cakes and crispy shallots, spicy pepper aujus
Bison burger topped/dressed with arugula, onion jam, tomato relish, horseradish mayo, bacon jam

-Duck breast served on polenta sweet potato waffles finished with balsamic maple sauce

-Pan fried grit cakes topped with shrimp, soft fried egg and finished with Cajun spiced Mornay sauce.(Dusted with bacon, cayenne, green chive mixture)

-Open Faced Bison Burger- Sweet Potato Polenta Waffle, Bison Burger topped then dressed with arugula, onion jam, tomato relish, horseradish aioli, and sauteed mushrooms.

-Pineapple Supreme: The Elevated take on a Pineapple Upside Down Cake, pineapple cake with layers of pineapple curd in between and finished with a cherry compote and a brown sugar glaze

-Bourbon Banana "Pick Me Up" The Elevated take on the famous Banana Pudding Fresh made pudding, layered in between soaked cinnamon bourbon vanilla wafers, whipped cream, banana Foster and finished off with a whipped topping and coco dust

-Carrot Cake Dream The Elevated take on Carrot Cake, iced in cream cheese icing Moist carrot cake, almost brownie like, mixed in with pecans,spices, shredded carrots and then swirled with a sweet cream cheese, baked to a soft finish.

The heat wave tour: 9 dishes that explore and celebrate the idea of Spice!

Dish 1: Texas Red Deconstructed- spice element: green and red chili's

Description: A savory and peppery base made with tomatoes, red wine, beef stock, roasted onion, red bell pepper and roasted red chili peppers- petite diced prime grade filet of beef- finished with black bean crema, green chili relish, chives and corn cheddar crisp

Dish 2: Curry over the sea- spice element: green curry paste, red pepper chili, fresh ginger

Pan seared Cod steamed in a coconut fish broth on top of garlic scallion basmati, finished with green curry coconut sauce, thin sliced chili's, fresh ginger and dusted with coriander thai Basil

Dish 3: bash on the bayou-spice element: cayenne, jalapeno fresh garlic

A seafood gumbo composed of lobster tail, tiger shrimp, bay scallops and aundioulle sausage, Cajun trinity, jalapeno, fresh garlic and cajun spices. Accompanied with basmati rice parsley pickles okra

Dish 4: The Jerk & Ox have gone bananas- spice element: scotch bonnet, green chili

Dish 5: The Pueblo experience- spice elements: coriander, mexican red chili's

A native American/Mexican dish of spiced slow roasted pork- finished with a Pueblo traditional chocolate bbq sauce- placed on a bed of stone ground white grits- dusted with smoked paprika crisp corn confetti

Dish 6: The Boston Cake party- Spice element: sriracha, roasted jalapeno

The three shelled seafood kings(Lobster, shrimp, crap) come together to form a Amish butter toasted panko encrusted cake, seasoned with roasted jalapeno, old bay, green onion, roasted garlic and dill- cooked and placed on a garlic sriracha aioli, with lemon on the side

Finished w/ a warm Caramel glaze

The crust is your traditional graham cracker crust with the hint of crystalized ginger
The filling is filled with the smooth and sweetness of a cheesecake , but coming through with earthy warm spices and the coolness of the sourcream top
