Hi friends. It’s strawberry season!! So, I’ve come up with a new entree. Here is what I will be offering.

Strawberry Balsamic Chicken- This is a fresh summer dinner flavored with a tangy balsamic marinade, and then topped with an Oregon strawberry and basil topping.

Roasted Vegetable Pasta Primavera- A take on a classic pasta dish. This version uses penne pasta, Parmesan and a wonderful combination of roasted vegetables.

I will be taking orders through Tuesday. My delivery days are Thursday through Saturday.

Good morning friends. Here’s what I’m offering this week for meal delivery.

Steak Fajitas- classic dish with flank steak and tri-colored peppers/onions are seasoned so every bite has a sweet, savory and smoky flavor.

Corn Tortillas-made locally in Beaverton.

Spanish Rice- a delicious compliment to fajitas that is seasoned with spices including coriander, chili powder and a dash of cayenne.

Mexican Chopped Salad- This is a colorful and fresh salad which includes tomatoes, corn, mango, jicama and cucumber. It is then tossed with a sweet cilantro lime vinaigrette.

I will be taking orders through Tuesday. My delivery days are Thursday through Saturday.

Good afternoon friends. I’m back with a new meal idea. Here is what I will be offering this week.

Pork Tenderloin with Raspberry Sauce- This is a new find!! The pork is topped with a savory balsamic raspberry sauce.

Polenta Cakes- These polenta cakes are crispy on the outside and dense and creamy on the inside.

Roasted Broccoli- A great colorful addition to the meal. The broccoli is so yummy and flavorful.

I will be taking orders through Tuesday. I am only delivering dinners on Thursday and Friday this week.

Good evening friends. Here is the meal that I’m offering this week.

Mediterranean Salmon or Chicken- The salmon or chicken is cooked with Mediterranean inspired herbs.

Spiced Israeli Couscous with Craisins and Pine Nuts- This a warm, fragrant dish featuring layers of flavor and texture.

Cucumber Tomato Salad with Fried Capers- This salad is so flavorful, and has a nice surprise with the addition of puffy crunchy capers.

Good morning all. I’m excited to be back and offer a new meal. Here is what I am offering.

Dijon Parmesan Chicken- The chicken is breaded in a light savory flavored mustard and Parmesan crust, and then baked to perfection.

Lemon Roasted Asparagus with Sliced Almonds- The asparagus is dressed up with lemon juice, lemon zest and toasted almonds.

Red Skin Potato Mash- I leave the skins on these potatoes to give them added color. It’s a fluffy and creamy dish with a nice added crunch from the skins.

I’ll be taking orders through Tuesday. My delivery days are Thursday through Saturday. I look forward to creating this meal for you.

Good afternoon everyone. Here is the meal that I’m offering this week.

Seasoned Beef Kabobs- The beef is marinated in a savory herb blend and then skewered and roasted to perfection.

Scalloped Potatoes- A wonderful complement to the beef kabobs.

Spinach with Sun-Dried Tomatoes and Parmesan Crisps- I wanted to add some color to the meal and this did the trick. It’s a very simple sautéed spinach with julienned strips of sun-dried tomatoes and Parmesan crisps.

I’m back. My meal post is a bit delayed, but better late than never😆. Here is what’s “cookin”…

Pork Tenderloin with Seasoned Rub-The pork is seasoned with cumin, coriander, thyme and oregano. It is then roasted to perfection and sliced thin.

Fettuccine with Sage Browned Butter- There’s nothing like the nutty flavor of the brown butter sauce with sage and a touch of Parmesan cheese.

Green Bean Salad- This salad is super colorful and yummy. I toss it with a Dijon vinaigrette and then top it with toasted walnuts.

Good morning. Here is the meal that I’m offering this week.

Prosciutto Wrapped Salmon or Chicken- This entree is super flavorful with a touch of elegance.

Herb Roasted Vegetables- This is one of my favorites ways to prepare a mixture of vegetables. They turn out perfectly tender and are full of so much flavor.

Cilantro Rice- I decided to add a lovely rice dish that compliments this meal in the best of ways.

Good morning friends. Here is the meal that I’m offering this week.

Chicken Piccata- The chicken is lightly sautéed and then a delightful butter, lemon and caper sauce is added.

Cheesy Potato Stacks- I stack potato slices, cheese and heartwarming spices to make a comforting side dish that looks so fancy.

Savory Roasted Carrots- I use the rainbow colored carrots for this dish. So much fabulous color to add to the meal. The carrots are seasoned with a savory blend of spices and then roasted.
