Portabella Sangwitch
Marinated mushrooms get cooked down to a meaty consistency. (Korean chili flake, coconut aminos, and olive oil for the marinade)
Remove the gills and stems (save for stock). Score the top, mix marinade and pour over mushrooms and make sure they are coated, let marinade 20 minutes. Cook in pan with 1/4” of water until everything is bubbly and loose. Then allow the water to cook off and glaze the mushrooms. Is a potato masher to smash the mushrooms down now and then to ensure they release their juices that then become a sauce on the outside. Once the liquid is reduced to a sauce, they are done.
Soaked cashews blended with lemon juice and salt make a lovely cheezy spread.
The other side of the bread gets… ketchup…Tomato paste, maple syrup, cider vinegar, onion powder, salt, and water make the ketchup.
I ate two of these today. I put this in Ezekiel bread so it’s not gluten free. Do what works for you.

Apple Pie
I try not to eat it in one sitting! I love apples for many reasons. Did you know that apples are wonderful for digestion. They assist the liver and gallbladder and can help alleviate frustration.
This little pie is made with a maple sweetened oat flour and chia crust. The filling is spiced simmered apples and h**p date cream. Lemon zest and juice brightens the flavor.
Pumpkin Soup
A cold wet day in southern Arizona. Onion garlic ginger and mushroom broth come together with puréed pumpkin and fresh coconut milk.
Cardamom, clove, allspice, and cinnamon give warmth to the soup.
Topped with thin sliced apples and crispy frites. Air fried shredded russets yum!
Finished with chili garlic onion sichuan peppercorn infused sesame oil.
Blueberry Meyer Lemon Tart

Making tomato sauce is a meditation and creating all of the elements is a venture into my creative dojo.
This is a hearty and filling meal (or 8) that Shiva also enjoyed.
Macadamia Nut Cheese Pizza
First time trying this. Blanched and blended macadamia nuts. Miso and a starch slurry added. Heated to activate the thickening and binding of the starch.
Placed atop a delicious tomato sauce and a unique crunchy thin crust made with chia, oat, and almond.
This cheese might actually work even better as a filling for stuffed shells or layered in lasagna.
Simple meals
Roasted or air fried sweet potatoes. Tossed with sesame oil, sumac and salt.
Lentils cooked with bay leaf and pepper, finished with peanut butter, coconut milk, and scallions.
The more nut butter added the more satisfying the lentils become.
Somewhere between a stew and a dip, whatever the case, this goes well with whatever slice you’d like to add.
Harvest Udon
turnip / acorn squash / mushroom / bok choi
Mushroom scallion turnip broth base. Accented with garlic ginger scallion chili oil (I make this stuff daily now).
Topped with crunchy umami tempeh bites.
Even though we live in the desert it’s still cooling off, a great time for bowls of living goodness.

Im a busy person, always working on something.
These bars were designed to keep me full when busy or active.
Protein rich h**p, chia, almond are bound with sunflower lecithin and dates. Flavored with vanilla and packed with medicinal superfood extracts.
To keep it balanced I use stevia, not as the only sweetener, but to accentuate the sweetness, thus needing less.
I’m not crusading against dates or maple, but I do know holistic nutrition and my own system. When I’m really hungry, too much sweet can have me spinning and unfocused.
Food is medicine, balance and dosage are key ☀️
These bars get a top layer of unsweetened cacao with sea salt and chili flakes.

Buffalo Tempeh
w/ Garlic Mash
A pressure cooker is a great way to get flavor into the . Include a fat, an aromatic, and an acid to ensure it receives the flavor and yields to the broth.
Homemade xxtra spicy salsa, olive oil, , and garlic work well. Cover with water and bring to pressure point, drop heat to low and cook for 12 minutes. Drain the tempeh and strain the liquid.
Air fry tempeh at 400° for 12-15 minutes or until brown.
Making the Buffalo sauce ::
Reduce strained cooking liquid in saucepan. Add arrowroot starch slurry to thicken. (1 t arrowroot in 1 t cool water :: you can use potato, kudzu, corn, or tapioca starch) Whisk until thickened, then shut off heat. Add hot sauce of choice, rice vinegar, and finish with a touch of coconut oil or vegan butter. Whisk to combine. Check for salt tang and spice and adjust accordingly.
This was phenomenal on the mash but can go in or on salad, sandwiches, or wraps.
Carrot Cake Tart
Spiced Walnut Date ‘cake’ // shredded carrots . cinnamon . clove . ginger . orange juice and zest
Cashew cream ‘cheese’ filling // lemon . soaked cashews . maple
Topped with supremed oranges and toasted coconut
Apple Pie Parfait
Baked cinnamon apples / maple coconut yogurt / ginger snap granola / crumbled walnuts
Thick rolled oats just need to be toasted. 300 for 30 minutes with a touch of coconut oil. Add some maple, ginger powder, salt and cinnamon and bake again for 10 more minutes.
The weather here in the Bay Area is quite autumnal, this dessert is light and satisfying.

Separate oyster mushrooms and fry on high heat. Use another pot to apply pressure to then as they cook for extra caramelized goodness.

Kabocha Squash Soup
Herbed root broth . Roasted Kabocha . Turnip . Parsnip . Coconut milk . Roasted red pepper.
Herbed White Beans
These beans are .
Soaked and pressure cook small white beans (these are the great northern variety). When pressure cooking, add as little water as possible just 1/8-1/4” above the beans. Cook them just until tender, release pressure and add a big pinch of salt, garlic, and Italian dried herb mix. Stir and replace lid and let them sit and cool.
Mix together red wine vinegar, salt, olive oil, crushed garlic and more dried Italian herb blend.
Fill each jar 1/5 with vinaigrette and then top with creamy white beans. Shake and then refrigerate.
These are good on pretty much anything including potato chips! Probably best on crostini
Pineapple Cranberry Sauce
Pineapple brings a whole level of magic to an already non traditional cranberry sauce.
Fresh cranberries are cooked with grated ginger, orange zest, pineapple chunks, and a touch of water.
When the cranberries pop lower the heat and mash mash mash. ((You can also immersion blend))
Finish with maple syrup to sweeten, fresh orange juice to brighten, and chia seeds to thicken. Let sit and cool 💓
If you want this as a jelly, just add more maple. If you want this as a tangy chutney, add some salt, a touch of Dijon, and diced jalapeños.

Nacho Cheese Refried Beans #beans are an essential part of my diet. Nutrient dense bundles that seek to absorb the #flavor you bless them with. This is a play by play, not an exact recipe. Be creative, substitute ingredients, have fun. Begin with #onion #tomato and #garlic. Sauté until the onions are translucent. This is when you want to add your #spices. Before adding spices to any dish, you want them to awaken. Essential oils within the spices require a bit of coaxing. To do this, sauté your spices, keep everything moving to protect them from burning. If you were to add spice after the pan is full of liquid, they won’t express their flavor potential. Dry toasting or cooking in some oil is the best way to awaken them. For this dish,smoked paprika, onion powder, cumin, chipotle powder, garlic powder, oregano and cilantro. Once the spices are warmed through and fragrant, I add my nacho sauce. Sweet potato, onion, garlic, mustard powder, lime juice all blended with boiling water for 2 minutes in the #vitamix. Finish the sauce by blending in #hempseeds, #chia, and #flax. Add your cooked beans and nacho sauce and allow to simmer for 20 minutes. Smash some of the beans into the sauce to thicken. Finish with lime juice, cilantro, and fresh jalapeño. Eat with tortilla chips, add to a burrito, or on top of rice. #southwest #nondairy #sauce #flavor #burrito #taco #frijoles #vegansofig
