Let’s take a moment to appreciate the sheer craftsmanship behind this spread! Team Olivia and Team Vanessa knocked it out of the park with an impeccable layout that’s as visually stunning as it is delicious. 👏

🔸 Balanced & Intentional Design – Every inch of this table was thoughtfully curated, ensuring a perfect mix of textures, colors, and flavors. The variety of crackers, cheeses, cured meats, fresh fruits, and nuts were arranged in an eye-catching flow that invited everyone to dig in.

🔸 Layering & Texture – Notice the precise layering? Rolled salami wrapped around cheese sticks, neatly fanned-out crackers, and stacked cheeses added dimension and structure, making the board feel abundant and luxurious. The careful placement of nuts and chocolates throughout gave a natural, rustic touch.

🔸 Vibrant Color Contrast – The bright pops of fresh strawberries, blueberries, and roasted peppers perfectly complemented the rich tones of cured meats and cheeses. The deep hues of chocolate and walnuts added warmth, while the olives and dips provided visual anchors throughout the display.

Valentine’s Day Scams are real, folks! Thought I was getting my wife a beautiful diamond necklace… now I’m seasoning a brand-new BBQ smoker. On the bright side, at least I won’t be in the doghouse—I’ll be in the backyard smoking ribs!

Lesson learned: If the deal looks too good to be true, it probably is… unless your wife REALLY loves BBQ. Then, maybe it’s a win?

My heart is so full of gratitude for this amazing team. ❤️ Elizabeth and Olivia battled the rain to make it to Sacramento for a charcuterie board class, not because they had to, but because they love what they do and believe in what we’re building together.

Surrounding yourself with people who share your passion, who show up, and who help turn dreams into reality is everything. This journey wouldn’t be the same without them, and I couldn’t be more thankful. We’re learning, growing, and bringing it all back to Ukiah—because this is just the beginning.

A Community United for a Stronger Future

Big Earl’s BBQ is beyond honored to have been part of the 46th Annual Meeting of the Northern Circle Indian Housing Authority. This event was more than just a gathering—it was a powerful reminder of what true community looks like.

The work being done by Northern Circle Indian Housing Authority, the Hopland Band of Pomo Indians, and Guidiville Rancheria is life-changing. Their dedication to creating safe, secure, and culturally grounded housing isn’t just about buildings—it’s about restoring stability, preserving traditions, and ensuring that future generations have a place to grow and thrive.

We were deeply moved by the tours of these incredible housing projects, witnessing firsthand the effort, heart, and determination being poured into making homeownership and quality housing a reality for Indigenous families. Housing is more than four walls—it’s dignity, security, and the foundation of opportunity.

We are humbled to have played a small role in such an important day, serving food to those who are doing the real work of changing lives. From the bottom of our hearts, thank you for including us. Your work is shaping the future, and we are grateful to stand with you in support.

Resting lets those juices redistribute, keeping every bite juicy and tender. Whether it’s a brisket, tri-tip, or smoked chicken, patience is the key to perfection. Trust the process!

When meat cooks, the heat pushes its juices toward the surface. If you cut in too soon, all that moisture spills out, leaving you with a drier bite. Resting gives the meat time to relax and reabsorb those juices, locking in flavor. Large cuts like brisket or tri-tip need at least 30 minutes to an hour, while smaller cuts like steak or chicken benefit from just 5-10 minutes.

At Big Earl’s BBQ, it’s not just about the food , the glamour , or even the world tours or VIP appearances ! it’s about the hard work behind the scenes that keeps us rolling and ready for every event.

We’ve already served up:
🔥 500+ pounds of pork
🔥 300+ pieces of chicken
🔥 150 pounds of tri-tip
🔥 175 pounds of New York steaks
🔥 200 pounds of prime rib
🔥 25 pounds of prawns
🔥 45 pounds of Texas sausage

But none of this happens without the grind in between. The not-so-glamorous part—scrubbing grates, deep-cleaning equipment, sanitizing, and prepping for the next back-to-back event.

Huge shoutout to Ace from Ace’s Cleaning for detailing the van and TJ from the maintenance crew for tackling the grills—cleaning, scrubbing, and sanitizing every inch of our setup. It’s a long day, but we’re getting ready, and it’s so worth it.
