My biggest wish was fulfilled this week. I got an opportunity to go home to Europe with my little family, which means, I have to close the doors for our Nordic in Charleston adventure. Nordic will still be active on here, online classes might happen from Europe and our recipe club will continue 🫶🏼
But after July 1st there will be no more catering, events or cooking classes at any of our locations in Charleston. No more grab and go or cakes. No more dinners here (but some in Europe if you want to come along👌🏼)
Nordic Cooking has been the most incredible journey of my life. I’ve been able to express myself as a chef and been able to do the events I’ve always dreamt of.
Truth is after I had Jack I have longed for home more than anything I’ve ever longed for. I would feel my soul leave my body every time my mom kissed me and Jack goodbye at the airport and now I finally get to be closer.
My new dream is a little lemon farm in Spain full of sunsets and a little bodega on the side where I can do my dinners while living a more slow paced life.
I want to work in the health space more. Help people with auto immune diseases learn how to cook for themselves. I want to do more retreats and I want to be more present as a mom and as a partner.
So Charleston, let’s do all the classes together the next two months, come to my pop ups, eat all the grab and go at @citylightseastside and get ready for a cook book release with ALLL THE RECIPES we love at Nordic Cooking.
To everyone who has ever bought a cake, taken a class, hosted an event, collab partners - thank you. For supporting me, for believing in me and for making me the person I am today.
To my team - you know exactly how I feel right now and I won’t stop giving you weird hugs any time soon. I thank you more than anything. Let’s crush these two months. And I remember - offer still stands for part of the lemon farm project 🍋

LOVE these heavenly Pecan Bars! 🌰 With luscious almond-coconut crust and gooey pecan filling, they're definitely a melt-in-your-mouth treat!
Just a few simple ingredients and a WHOLE LOT of love create these decadent delights. Here's a sneak peek at the recipe:
CRUST:
1. Mix almond flour, coconut flour, maple syrup, melted coconut oil, vanilla, and salt.
2. Press into an 8×8 inch pan and bake at 350F for 15-17 mins until golden brown. Let cool.
FILLING:
1. Heat coconut oil, coconut sugar, maple syrup, and vanilla in a saucepan until boiling.
2. Let bubble for 1 minute, then stir in almond milk and chopped pecans.
3. Pour over cooled crust and bake for 20-22 mins.
4. Cool for 15 mins, chill in the fridge for 2 hrs, then indulge!!! ✨
