This year, weāre baking 60,000 cookies for the Polar Express train in Old Sacramento and Jamestown. This is our 14th year baking Cookies for the @californiastaterailroadmuseum It has become our tradition, and itās something we look forward to every year! š„°
I started out with no kitchen, no crew! I made friends with a restaurant owner who let me use the kitchen at night after they closed. I called a few friends who wanted to make extra money. So, in a tiny kitchen, the size of a closet, with an oven with only two racks, a crew of 6 people, including myself, we baked from 9pm - 3am. I made the dough from scratch. We scooped, baked, packaged, heat sealed and labeled every cookie by hand. We could only bake 192 cookies an hour, our goal was 1000 cookies per night. We did it! Weāre happy to still be baking for the Polar Express to this day!
Now having access to a commercial kitchen, weāre able to bake 750 cookies an hour. With a crew of 10 people, we still package every cookie by hand.

Being in business for over 15 years, Iāve had many moments where I wanted to quit. Moments where I question whether Iām still doing what I love. I came so close to throwing in the towel just last year in February. Luckily, I am self-aware enough to know to not make any major decisions when I am going through strong emotions. So I gave myself a few months to think, and to process how Iām feeling. And then in July of that same year, I realized that I would very much regret it if I did quit. I wasnāt happy with the current situation my business was in so what I needed was not to quit but to pivot. I also needed to reassess my goals and vision. I had to remind myself that thereās really no end goal when it comes to business. Itās an infinite game. And thatās what I love about it! š„°

I was an artist before I was a baker/business owner. I mostly painted landscapes. Then I traded my paint brush for icing. Been a long time since I held a brush. So Iām quite surprised that this turned out great. This is my first time using body paint. My son loves the way it looks. š„° Took 2.5 hours but I really did enjoy it! This is his Halloween costume, anime character, Sukuna.

Happy Monday!! Iām trying to enjoy the Fall weather as much as I can before it starts getting too cold to be outside in the morning.
This is where I spend most of my early mornings. Listening to birds singing, leaves rustling, and channeling my creative side. I try to make all of my social media stuff on Mondays. That includes reels, posts, stories, blog, recipes. I schedule them for the rest of the week. I find that Iām more tired later in the week and Iām not as creative. So Mondays it is!
