Making Marinara Sauce
Making Marinara Sauce

Pour a can of San Marzano tomatoes into a large bowl and crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Heat the oil over medium heat, then add 7 fat cloves of sliced garlic. As soon as garlic is sizzling, add the tomatoes & tomato water. Add a bit of crushed red pepper, some oregano and salt. Place a large basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes.

Par boil some yukon gold potatoes (don't use Idaho or Russet potatoes for this). Drain & cool, then peel & slice into thick slabs. Fry in garlic oil & serve over broccoli rabe!

The batter was made with gluten-free flour, potato starch, eggs & kimchi along with 10 cups of assorted , shredded vegetables. Served with a tamari, sesame & ginger dipping sauce. The soup is a vegan Coconut Curried Lentil which was really quite yummy!

So what's with all the muffins?? I cook breakfast for the inpatients at Joe Raso Hospice Center (United Hospice of Rockland). I also bake a little something for the visitors and staff. Muffins are good because they're easy to grab and yummy all day. I just try not to repeat myself too often. #bananacrumbmuffin
