What makes a great pasta? Well, the answer you get may depend on who you ask -- we can only speak for ourselves. First, we carefully select the finest unbleached flour available for our pasta and when becoming adventurous in creating our specialty pastas, we are sure to use fresh ingredients such as pureed vegetables and quality spices. The pasta is then prepared in small batches, shaped and cut for drying by authentic Italian-made equipment which includes extrusion through bronze dies. This gives each shape a coarse surface that better absorbs the sauce. The production of our pasta is designed to preserve the original nutrients and exceptional flavor of our wheat flours. The key "ingredient," however, is the care with which we make our all of our products! OUR HISTORY
"Mangia! Mangia!" Grandma would yell while dishing out her chicken soup with pastina, followed by homemade orecchiettelli and sauce with baked chicken and potatoes. And in all those years we sat at her table, I don't think we ever let her down. We were a family that believed in food. The east side of Utica, New York has long been known for its strong Italian roots. A history of immigrants came to America from their homeland bringing tradition and culture, which included many wonderful foods. It was in this setting that I began The Pasta Shoppe in 1987 with my cousins Angelo and Anthony. We made pasta and sauces for our local customers. Their high standards kept us on our toes and has, in its own unique way, served us well. We have built a strong following for which we are most thankful.
