Arguably the oldest type of Italian pasta, Testaroli originated from the ancient pre-Roman Etruscan civilization. Just water. flour and salt, but cooked to perfection with special cast iron tools called Testi. Today served with pesto, olive oil, percosino or ragu'. DELICIOUS.

Cooking pasta
Right way to cook pasta?
1. Fill 3/4 of large pot with water
2. Cover and bring to full boil
3. Only then, add salt. At least 1 tablespoon
4. Reduce heat to medium, add pasta
5. Cook for the time indicated on the box
6. For small, thin pasta, add a tablespoon of oil, to avoid clumping
7. Save half glass of pasta water that you will add to sauce if the final result is too dry.
8. Drain the pasta 1-2 minutes before the indicated time.
9. Add drained pasta and sauce to large pan and cook for 1-2 minutes
10. Toss and serve with fresh authentic parmesan (no cheese on seafood pasta)
