Our ancestors did not have active dry yeast available at the local grocery stores. Starters were the source of yeast. A starter is a flour and water mixture that contains yeast. When bread was made, Part of the starter would be set aside. The reserved starter would be fed to help the yeast multiply for the next day. Starters have been known to be kept alive and in use for hundreds of years. Over time, these starters would become contaminated with various types of bacteria. The bacteria would produce acidic by products. These acids, combined with the alcohol released by the yeasts, would give the breads a sour flavor.

Community supported agriculture (CSA) is part of a growing (pun intended😜) social movement that encourages urban and rural citizens to share responsibility for the land where their food is grown as well as for how their food is produced. In simplest terms, CSA is a partnership between agricultural producers and consumers. Members or “shareholders” pay a fee at the beginning of the growing season to meet a farm’s operating expenses for the upcoming season.
