“There are FAR, FAR better things ahead than the ones we leave behind.” These words from C.S. Lewis are staying with me (Audrey) so I don’t get too sad at the end of this year.

Jason and I have had three years of making crêpes, crêpe cakes and branching out with other French foods.
It was never about the food! (Well, maybe a little!!)

Our motivation was for Audrey to try something, develop her competence, test the market and make connections with people.
We end this year (and our food business) with much thankfulness for all the smiles you have brought us. And we are ready for something NEW.

GOOD news, Jason found a new job the day before Christmas and we are staying in the Cedar Valley! Audrey is looking for something part time with a schedule that fits better with the family.

We have a TON of pictures and memories from events and market days. These memories will stay with us.
Thank you for being a part of it!❤️

Christmas markets were always a tradition with my family.
This year, we took our girls to the Twin Cities and we loved the variety of cultural influences from Europe.
We tasted some great food and talked to inspiring people.
One vendor even wrote Audrey a poem. We also stumbled upon the Alliance Française. We did see a crêpe vendor there. 😊
Plus, Audrey was happy to stock up on fresh chestnuts for our crêpe cakes.

Most people agree that EGGNOG comes from England in the Middle Ages. It was used by the upper classes who drank it hot.
It was also made to manage a cold.

Most recipes include eggs (either white or whole), whole milk, heavy cream, sugar, nutmeg and sometimes alcohol (rum, bourbon or brandy.

We make an EGGNOG crêpe cake with cream cheese filling, eggnog spices and graham crackers, finely ground and added to each layer. It resembles a light cheesecake with a subtle eggnog flavor.

If you don’t like eggnog, most people say you haven’t tasted the real thing. A homemade version is SO MUCH better!
Of course, we make our version of eggnog from scratch to add to our crêpe cakes.

Audrey has transformed the kitchen into a cookie making factory!

Every year, she makes SO many batches of cut out cookies.
For church, for school, for neighbors, for our family, we never seem to make enough.

One stable is gingerbread. We actually use our fresh gingerbread cookies to add to our Gingerbread crêpe cake. Both inside and out!

We also flavor the crepes with a gingerbread spice blend and vanilla. Pair the warm, familiar flavors with a light cream cheese filling and you got a scrumptious dessert that stands out.

Meet Peppermint Patty! She has a sweet personality. Don’t be surprised if she shows up for dinner.😊

These crêpes are flavored with cocoa powder and we whip a chocolate cream that is also infused with peppermint extract.
We also like to sneak in a few layers with whipped cream to turn this into a light dessert.

As if this wasn’t enough, we add tiny bits of peppermint chocolate for extra flavor and a bit of crunch. Ghirardelli, of course!

We have a "love, hate" relationship with sugar. It tastes so good but we know, it's bad for us. People say it is like a drug.
We did some research and found out that a slice of cake can have 20 to 35 g of sugar. Sometimes up to 48 g.

If you add frosting (or confectioner sugar) on top, this can easily double (or more!) the sugar content of the whole cake.
2 tbsp of buttercream frosting has 22-24 g sugar!!

This is why we try not to decorate with sugar. It turns a good thing into a bad thing.
See where our slices of crêpe cakes range in their sugar content. Good news: if you cut your crêpe cake into 12 slices, it's even less :-)

If you had to keep only ONE dish for Thanksgiving which one would it be?

For Audrey, it is stuffing.
This year, I made my first whole plant based, gluten-free stuffing. With a bit of dairy free butter, GF bread, mushrooms, celery, veg. broth, garlic, salt, pepper and herbs of Provence because you know.🤭
Also, I chopped and added the raw chestnuts I found.
I thought it was one of my crazy idea but I googled it and Martha Steward does it, SO…I am allowed. 🥴

I cooked sausage on the side to add for other family members.
Voila!

Audrey delivered a PRALINE crêpe cake tonight to new customers.
They had asked us to cut it into 12 slices, which we were happy to do. They were truly excited at the sight of it.

It made Audrey smile in return. Because excitement is contagious!

We have THREE winners who guessed correctly!! You receive HALF off one slice. Check your messages 😄

Our most challenging flavor to make is CARAMEL-APPLE.
We make a caramel pastry cream and alternate a thin layer of apple butter or salted caramel right on top of the cream.

We need to make sure the apple butter is not too wet, the caramel not too hot nor too thick and the cream not too soft. It’s tricky! Plus, we need to put just the right amount between layers. Not easy but so worth it.

Pistachio and toasted praline (which came as a close second guess) are time consuming but much easier to assemble.

CARAMEL APPLE is our flavor for PICKUP this Wed. Nov. 20th.
