Tip when cooking ribs. When they begin to crack like this, they are done. Use your tongs to pick up the ribs and give them a little snap. If they bend they are not done yet. But if they crack then they are done.

Update: TSC BBQ Barons took 19th place out of 32 teams, many of those professional BBQ competition teams. Our brisket came in 10th and our dessert 4th. This was our first ever competition in Ohio and we have some things to learn. Great work guys, we are proud of you.

The Third Street Cigar BBQ Barons at the Lima Pigfest State Championships last night and today. Through pouring rain and strong winds, the boyz cooked throughout the night. With the competition at noon today we are looking to bring home the gold.
