A Brand New Edition of Meet the Crocs!

Hey folks! It’s been a while, but we wanted to share a brand-new edition of “Meet The Crocs” so you can learn a bit more about our Croc family!

Meet Jose! Jose is our Head Chef over here! He’s worked at Crocodile since May of 2023, and he’s been a wonderful addition to our small team. Jose does EVERYTHING with the food you see when you order our catering or come into the café for lunch. From ordering, to prepping, to cooking, sometimes even delivering… he surely does it all!

Jose has 20 years of kitchen experience and specializes in Italian and American cuisines.
He enjoys working at Crocodile because he is trusted to have freedom in the kitchen. He isn’t constantly micro-managed or questioned which makes him feel like he’s doing a great job as chef. He also likes working at Croc because the schedule doesn’t require him to work a lot at night, which allows him to spend more time with his family.

Aside from hanging with his family, Jose enjoys watching cooking shows in his free time. He also loves trying new recipes at home for his family to enjoy!

Saint Lucia Beach Chowder....

I learned this one from a fisherman in Londonderry. We cooked it over a live fire in a big ole pot. Yumm...

Here's my version folks...

creamy and thick with Gulf shrimp, salmon, Yukon Gold potatoes, a splash of cream and island seasonings.
But I digress…

KURT'S SHRIMP SAGANAKI TODAY, FOLKS!!!...
you don't wanna miss this!

I remember the first time eating shrimp saganaki. We were in a sun baked litlle café on the Greek Coast overlooking the resplendent waters of the Aegean sea. Sipping on a carafe of Lykovouno Assyrtiko (a local crisp white wine).

The waiter brought the first course, shrimp saganaki. Aah, the aromas that wafted over the table minglingling with the salty sea breeze!

The shrimp were served in a garlic scented tomato sauce and topped with feta cheese that had turned golden brown in the oven. There was an aromatic sprinkling of fresh mint over all. Crusty bread was served alongside for dipping. A plate of lemon wedges were provided for zesty squeezing.

Heaven happened upon digging into this simple- yet transformative dish.

I was reminded of this day in Greece after recently dining at the Opa Taverna in West Chester. Their version is quite nice as well.
