We might as well take this time to whip up some Chicken N’ Waffles, right!? And maybe a Mimosa or 2.....Attached is the recipe we tried out this morning! ( p.s. we are all on the same boat, your summer body can hold off another 30 days) 🙂 💃
Waffles
2 c. All-purpose Flour
3 tsp. Baking Powder
1/2 tsp. Salt
1/4 c. Sugar
1-1/2 cup Milk
2 whole Egg Yolks
1 TBSP Vanilla Extract
1 stick unsalted Butter, Melted
4 whole Egg Whites
Directions:
Preheat the waffle iron to the regular setting. Sift together the flour, baking powder, salt, and sugar in a bowl.
In a separate bowl, whisk together milk, 2 egg yolks, and vanilla. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined.
In a separate bowl using a mixer, beat the egg whites until stiff and bright white, about 4-5 minutes...( if you want to get your daily work out, you’re more than welcome to use a whisk and arm power 💪🏻).... Slowly fold them into the batter, stopping short of mixing them all the way through.
Scoop the batter into your waffle iron in batches using a 1/2 cup measuring device and cook according to its directions on the waffle maker. Remove and set aside.
Fried Chicken Tenders
1 large egg
1/2 c. buttermilk
1 c. all-purpose flour
1-1/2 tsp. garlic powder
1-1/2 tsp. pepper
1/2 tsp. salt
1/2 tsp. paprika
2 pounds chicken tenderloins
Vegetable Oil for frying
Directions
In a shallow bowl, whisk egg and buttermilk. In a separate shallow bowl, combine the flour, garlic powder, pepper, salt and paprika. Dip chicken in egg mixture, then flour mixture.
Add oil to a large, high-sided pot until the level reaches about 3/4-inch. Heat over medium-high heat until oil is simmering (about 375°). Using tongs, place a couple chicken tenders in the hot oil without crowding the pan. Cook until golden brown on the bottom side, a few minutes, then flip and cook until the second side is also golden, a few minutes more. To assure the chicken is fully cooked, with a meat thermometer check the internal temperature of 165 degrees. Set the cooked tenders on the paper towel-lined baking sheet to drain.
Place the waffle on the plate, and top with the chicken tender and your choice of maple syrup. Enjoy!
