Oh my goodness, what an incredible evening! My staff and I had the pleasure of catering dinner for this lovely event on Saturday at St. Anselm Parish.

I absolutely loved planning with Beth, Joan, Marge and Lisa. Thank you ladies- it was such a pleasure!
And a sincere thank you to Larry and Anthony for all the extra set-up details you assisted with !!!!

The MENU included:
*My Sensational Seasons Salad
*Prime Rib w/ Beef Au Jus
*Tarragon Chicken in a
White Wine Cream Sauce
*Red Skin Smashed Potatoes
*Green Beans Almandine
*Mini Desserts Medley

I have had a SERIOUS CRAVING for Fried Goat Cheese! It is a love, love, love of mine and I serve it along side my Sensational Seasons Salad w/ Fresh Berries, Sweet Pecans and a luscious Raspberry Poppyseed Vinaigrette. My husband on the other hand is a Steak ‘n Taters guy all the way! I also LOVE this combination, but not more than my Goat Cheese salad at the moment 😂.
These featured plates were our Friday night dinner. Salad for me and the hearty meat and starch for him. Just curious, Which would YOU choose?

Last weekend, I attended a wedding ceremony at Little Piney Lodge in Hermann Mo. The bride is a beloved cousin so I was there as a guest but I also had the privilege of catering a few items for her. I made her wedding cake which was both Gluten and Dairy-free (it turned out really delicious!!) and also some individual Charcuterie boxes to be enjoyed between the Ceremony and Reception Dinner- Thank you to Sandy/Nana, Abby and Shane for your help with these!!! I also set up a hot beverage bar that included Coffee, Cider and Hot Water for Tea & Cocoa. My husband helped me with this and he was a tremendous blessing 💕. The winter setting at Little Piney was incredible, the Bride was stunning, the food was delicious and we all had a wonderful time celebrating this blessed marriage union. I’m so grateful for my family and the time we spent together!

Saturday last, I catered a 60th Wedding Anniversary for an AMAZING couple (they also celebrated his 80th Birthday!). Throughout the evening, they danced and laughed together as though they were celebrating the start of their marriage… it truly was a joyous day and I felt privileged to witness this grand occasion!

I generally don’t post a lot about my family on my Business Page but I’d like to share a special blessing we received for the July 4th weekend. My son Andrew is in law school and is currently Interning for Alan W. McIntyre, Attorney at Law. He and his wife Dorla sent these amazing fresh “Purple” Green Beans to us as a holiday treat. For all my cooking, I’ve never seen any like these (I admit, all my skills are in the kitchen – I DO NOT have a green thumb, nor do I enjoy gardening😉) but I truly love experiencing new foods and seeing what others are growing, producing etc.
My instructions (through Andrew) were to cook them as I would any fresh green bean, and the purple color would become a vibrant green. The pictures below show the steps I took and the transformation. These were probably the freshest and most delicious green beans I’ve ever had so I wanted to give a shout out and “THANK YOU” to Alan and Dorla… I appreciate you thinking of us- Mmmm, DELICIOUS!

This is a Touch of Class House Recipe. I call it my Tostadita Dip and I serve it with Yellow Corn Chips!
This is a layer dip that includes: shredded Chipotle seasoned Chicken, Black Beans, a spicy white Queso, Chihuahua Cheese Shreds and topped w/ a Roasted Corn and Red Pepper Salsa and a touch of Lime. I garnish with a touch of Sour Cream, Jalapeño slices and fresh Cilantro! It is DELICIOUS!!!

An exquisite Medium Rare Filet!

I sliced it thin and folded it on to toasted slider buns (Butter w/toasted sesame, White w/Poppy Seed and Salted Pretzel), then topped with Monterey Jack Cheese and Boston Lettuce.

Sauces were served on the side and included: Chipotle Horsey Mayo, Horseradish Mayo and Spicy Mustard!

Celebrating Immanuel St. Charles’ Class of 2024 with a Graduation Dinner! This is always a FUN event for me… It’s an opportunity to reconnect with Teachers and Staff members I see less often now that all our kiddos are in high school or college 😊.
