Did a little smoke before Christmas tried something new and was told it was better than my brisket which I think is far fetched but it did turn out pretty good. But did a pineapple burbon smoked pulled ham and a brisket! The ham is super tender and most definitely not short on flavor!

It was wet and a little wild but got some gourmet slow smoked pulled pork for my 5yo birthday party done yesterday!!!

Gonna be eatin good today!! Over flowed the smoker as well as the pans after I filled one up completely with ribs a little mathematical error in figuring volume but had another pan on hand to make everything work perfectly!!

12 racks of ribs on thought I’d be smart and use rib racks however after wrapping they don’t work to good definitely gonna need an upgrade soon!!

I know not much has been happening lately but there is good reason for it! We are in full swing of competitive travel football! We have a home game next weekend maybe if cards get played right I can get some pulled pork going I have a new method I have been wanting to try out!

What a surprise Saturday!!! It was great!! Ribs came out amazing!! And the Alabama hog pulled right off the bone and apart! And the fish dip let me tell you!! The sausages I was a little nervous about because it has been some time since I’ve done them but all I have to say is Beyoncé was right if you like it you better put a ring on it and that sausage had the perfect ring! Wish I was able to get a pic of it but was in the zone with packaging at that time 🤦‍♂️🤣

Had a surprise free Saturday!! 😁😁😁😁

Some fish dip was requested and was asked to smoke up some wild hog sausages from Georgia hogs that will be going on a little later and just because I threw on some roasts from another hog. And for us got some baby back ribs goin!! Started with cherry and when the fish came off threw some hickory on and after the cherry burns off will be only hickory from here on out! What a surprise Saturday! These will be few and far between for the next few months since football season is going full swing may have to play my cards right and do a tailgate for some of our games! 😜

Also I know I have been slacking on posts but just know it’s for a good reason!! First season of competitive travel football!!! Been scrimmaging on Saturday for the last month and a half!! And practicing 4 days a week since April!! And last weekend did two games in Georgia at the Southren Hospitality preseason tournament!!🏈🏈🏈

That being said I will do better at knowing our schedule this season and will post the Saturdays it will be feasible for me to cook soooo if you would like to have a tray full of delicious slow smoked mouth watering meats keep in mind!!!

Dip came out great! Swordfish coming out with a nice little smoke ring again too! This go around was much better!

Round 1 started! Sword fish again and some king fish! It’s gonna be a tasty day! With all this rain I have the tent set up just in case 🤣🤣🤣
