Elizabeth’s Legacy

Elizabeth's Catering is a family owned and operated catering company founded in 1995. We are proud to be in the top 10 largest offsite catering companies in the state of Utah!

In 1995, Elizabeth Copeland received a surprise call from her husband, Richard, informing her that he purchased a sandwich shop while on a business trip in the hopes of providing Elizabeth the opportunity of becoming a restauranteur. Elizabeth at the time was a school teacher and music instructor. Shocked by her husband’s news, Elizabeth was most surprised to learn that the sandwich shop was located in Salt Lake City, Utah, when the Copelands were living in Delaware.

After relocating their family of seven, Elizabeth’s sandwich shop quickly took off, receiving their first request for catering within the one month of being open. In 1998, the Copelands sold the sandwich shop, and launched Elizabeth’s Custom Catering, doubling their business within the first year alone.

As the company’s clientele grew, so did the recognition for their exceptional food and service. In 2003, Elizabeth’s was first featured in Utah’s Business magazine, and was further recognized in 2006 as one of the top ten Woman-Owned business in Utah. In 2011, Elizabeth’s was listed among the top 12 careers in Utah, and the following year received the Chamber West Business of the Year Legacy Award.
