For over fifty years, the Hedary family has crafted hummus the way it’s meant to be made—without shortcuts or preservatives.

We’ve never used canned garbanzo beans, citric acid or any artificial additives. Instead, our hummus is a labor of love, created from the finest, simplest ingredients.
It takes three full days to prepare: We begin by soaking dry garbanzo beans overnight, then slowly cook them until they’re perfectly tender. On the third day, when they’ve cooled to just the right temperature, we whip them together with rich tahini, fresh-squeezed lemon juice, and raw garlic cloves. The finishing touch? A beautiful drizzle of extra virgin olive oil that makes every bite irresistibly smooth.
And what better way to enjoy it than with a piping hot, fresh pita straight from our oven? Tear it open and dip in—pure, simple goodness.

Hummus is a treasure trove of nutritious ingredients, each offering its own wealth of health benefits. Here are just a few reasons why this superfood is truly a nutritional gem:

Ingredient: Tahini
Tahini is a creamy paste made from finely ground sesame seeds. Sesame seeds contain the most phytosterols compared to all other nuts or seeds and can significantly lower your LDL, or ‘bad’ cholesterol. Normally, it is difficult for the body to absorb the many nutrients found in sesame seeds due to their hard outer layer. But consuming them in the paste form of tahini allows the body to absorb the nutrients they provide more efficiently.

Ingredient: Garbanzo Beans (also known as chickpeas)
Garbanzo beans have a low-glycemic index, which means they are digested slowly, releasing glucose gradually into the bloodstream. This is good for you because it causes blood sugar levels to rise gradually instead of spiking, which allows the body to secrete the right amount of insulin to process the sugar and reduces the risk of chronic disease. Garbanzo beans are also particularly high in the minerals manganese, copper, zinc and iron and vitamin B9 (Folate).
Hummus is a superstar food for vegetarians and vegans. Garbanzo beans, the main ingredient in hummus, are a great source of non-heme iron. While non-heme iron isn’t absorbed as easily as the heme iron found in animal products, the lemon juice in hummus provides vitamin C, which helps the body absorb the iron more effectively. Additionally, garbanzo beans are rich in copper, another essential mineral that supports iron absorption.
And here’s a bonus: while enjoying warm, freshly baked pita bread with your hummus, you’re unknowingly creating a nutritional powerhouse. Together, pita bread and hummus form a complete protein, providing all the essential amino acids your body needs. This is especially important for vegans and vegetarians, as complete proteins are typically only found in meat and dairy products.

Ingredient: Fresh Squeezed Lemon Juice
Lemon juice is an excellent source of vitamin C, which boosts immunity, combats infections and supports wound healing. It is also rich in flavonoids— powerful antioxidants that help eliminate harmful free radicals, protecting the body’s cells from damage.

Ingredient: Raw Garlic
Garlic has been shown to promote health and help prevent common diseases like cancer, heart and metabolic disorders, high blood pressure, and diabetes. These benefits come from its antioxidant, anti-inflammatory, and cholesterol-lowering properties, as seen in multiple studies. Raw garlic offers the greatest health benefits, while cooked garlic and garlic supplements do not deliver the same level of effectiveness.

A Taste of Togetherness and Unexpected Guests 🍽️🇱🇧

In a Lebanese home, family dinners are more than just meals; they are cherished moments where love and togetherness are celebrated daily. The table often holds warm, hearty stews, with everyone gathered around to share stories and laughter. These meals are simple yet deeply satisfying, often finishing with a spread of olives, zaatar & olive oil, or perhaps a selection of cheeses or creamy labneh. It’s tradition to wind down the meal with a cup of hot tea, allowing the conversations to linger.

What truly stands out is how unannounced guests are welcomed. If someone arrives just as dinner is being served, the word 'Tfadal' is heard, meaning 'come in and join us.' Without hesitation, an extra seat is pulled up, and the meal is shared as though it was meant for many. This spontaneous hospitality reflects the warmth of the Lebanese heart—there’s always room for one more at the table.

In Lebanon, it’s not just the food that nourishes, but the sense of belonging. Every meal is an opportunity to embrace others, planned or not. ❤️✨
