FRENCH DIP SLIDERS:
15 oz slider buns
6 tbsp unsalted butter
3 cups sliced yellow onion
3 tsp thyme leaves
2 tsp grated garlic
½ tsp granulated sugar
¾ tsp salt
¼ tsp black pepper
1½ lb deli roast beef
½ lb Swiss cheese
10.5 oz French onion soup
1 oz Au Jus mix

PIZZA SLIDERS:
12 count package Hawaiian rolls
2½ cup shredded mozzarella
¾ cup pizza sauce
20 slices deli style dry cured pepperoni
⅓ cup salted sweet cream butter
2 tbsp grated parmesan
1 tsp dried Italian seasoning

BUFFALO CHICKEN SLIDERS:
3 cups shredded chicken
¾ cup buffalo sauce
7 tbsp butter divided
1 pack Hawaiian Rolls
½ cup mozzarella cheese
½ cup cheddar cheese
¼ cup blue cheese crumbles
2.5 tbsp ranch seasoning

PHILLY CHEESESTEAK SLIDERS:
1 pack Hawaiian rolls
2 tbsp olive oil
1 lb steak thinly sliced
½ large onion
1 green bell pepper
8 slices provolone
3 tbsp butter melted
2.5 tsp concentrated beef stock

WHITE CASTLE SLIDERS:
12 dinner rolls
1 lb lean ground beef
1 tbsp Better Than Bouillon Beef
¼ tsp garlic powder
1 cup yellow onion
10-12 Kraft American Cheese Slices
20-24 dill pickle chips
⅛ tsp salt
⅛ tsp ground black pepper
ketchup & mustard

MASTER DOUGH – 4 PRODUCTS

🧾 BASIC MASTER DOUGH (For All Items)

Ingredients

All-Purpose Flour: 4 cups (500 g)

Whole Milk (warm): ¾ cup (180 ml)

Active Dry Yeast: 2¼ tsp (7 g / 1 packet)

Granulated Sugar: ¼ cup (50–55 g)

Unsalted Butter (soft): ¼ cup (55 g)

Salt: 1¼ tsp (7 g)

👩‍🍳 BASIC METHOD

1. Mix warm milk + sugar + yeast. Rest 5–7 minutes until foamy.

2. Add butter, salt, and flour. Mix to form soft dough.

3. Knead 8–10 minutes until smooth & elastic.

4. Cover and proof 60–90 minutes until doubled.

5. Dough is now ready to shape.

🥐 PRODUCT VARIATIONS

1️⃣ Croissant

Reduce butter in dough to 2 tbsp

Add 1 cup cold butter for laminating

Roll, fold 3 times, chill, shape, proof, bake 375°F (190°C) – 18–22 min

2️⃣ Milk Bread / Dinner Rolls

Optional: add 1 egg

Shape rolls

Bake 350°F (175°C) – 18–20 min

3️⃣ Burger Buns

Add 1 egg

Brush with egg wash + sesame

Bake 375°F (190°C) – 15–18 min

4️⃣ Donut Dough

Increase sugar to ⅓ cup

Add 1 egg

Fry at 350°F (175°C) until golden
