Tenderloin Cooking Instructions:

Take beef out of fridge about 1 hour before cooking and allow to come to room temp.
*Place cut celery, carrots and onions in bottom of baking pan. This will serve as your “roasting rack”.
*Season your tenderloin on all sides liberally with salt and pepper or seasoning of choice.
*Add beef base or bouillon cube and 1/2 inch of water to bottom of pan for Au Jus.
Preheat oven to 425 degrees and sear roast in high oven for 15 minutes. Turn oven down to 300 degrees and continue to cook for 10 minutes per pound (or until desired temperature is reached). Temperature will rise about 5 degrees after removing from oven. Target finished temps are 120-125 for rare, 130-135 for medium rare and 145 for well done.
Remove meat and set aside on cutting board for at least 30 minutes before you slice it. This keeps juices locked in. Do not cover.
Remove vegetables from pan & set aside. Place pan on burner, add 1/2 cup beef broth or red wine. Bring to a simmer, whisking off any bits on bottom of pan. Serve on the side.

*If you ordered the “ready to roast” option, we have provided the vegetables, beef base and seasoning.
**We recommend you leave in a digital thermometer so that you can monitor the temperature progress. This roast should NOT cook quickly. Low and slow for that perfect even color and tenderness.

Merry Merry PVM family! Just in case you need them.
Prime Rib Roast Directions:

Here are the happy faces of our amazing team who worked tirelessly the last three days to fill your orders to perfection!!! I am so proud of our team and grateful that I get to work along side these awesome people and call them friends. We will open Tuesday am at 8:00 for anyone who had a last minute change of plans or who missed our order cutoff. We made extras of everything and they will be available first come first serve when our doors open. See y’all tomorrow!
