What a joy it was to be part of a special celebration for a newlywed couple surrounded by their local family! Despite the cloudy and cool weather, the atmosphere was warm with love, laughter, and of course, delicious food.

Paella Guy served up two incredible paellas: a vibrant vegetarian option bursting with fresh produce and a hearty meat-and-seafood paella filled with rich, savory flavors. Alongside the paella, we plated a crisp and colorful spring mix salad, served sourdough bread from burtonzbakery, and offered our signature balsamic herb tapenade for that extra touch of deliciousness.

The setting may have been overcast, but nothing could dampen the joy of this celebration—or the amazing food! Congratulations to the happy couple, and thank you for letting us be part of your unforgettable day. Wishing you a lifetime of happiness, love, and good meals together!

This past weekend was a true team effort as we, Paella Guy and Castaneda's Marketplace, joined forces to support our veterans breakfast tradition. The weekend started on Saturday afternoon at merriamvineyards, where we worked under the scorching sun, stirring giant pans of paella. The aroma of saffron, seafood, and spices filled the air, drawing in guests eager for a taste. But the work didn’t stop there. By Saturday evening, we were at Pech Merle Wine Winery, braving the heat once again to serve up another round of paella. We pushed through, knowing it was all for a greater cause—raising funds to support the weekly veterans breakfasts we host at Castaneda’s Market.

Sunday afternoon saw us back at merriamvineyards for another event. The heat was relentless, but so was our commitment. Each serving of paella was more than just food; it was a contribution to the veterans we proudly serve. Every stir of the pan felt like a step closer to giving back to those who have sacrificed for us.

For years, we’ve hosted Saturday veterans breakfasts at Castaneda's Marketplace, offering a warm meal and a welcoming space for service members to gather and be appreciated. This weekend’s efforts reflected that same dedication to service and community. Despite the heat and exhaustion, we stayed focused on our mission—this was for our veterans, the ones we’re honored to serve week after week.

As you consider your vote in this critical election, I urge you to reflect on the values that unite us as a community. Harmful rhetoric about immigrants, including spreading false and dehumanizing stereotypes, is not only wrong—it’s deeply destructive. Some claim immigrants pose a threat through baseless accusations, such as suggesting they engage in harmful or unusual behaviors. These statements are designed to instill fear, but they couldn’t be further from the truth.

At Paella Guy, we are first-generation immigrants who have worked hard to become an integral part of this community. Like so many immigrant families, we contribute every day, not just economically, but by enriching the fabric of this town with our culture, our traditions, and our passion for building a better future. We serve our neighbors, we help local schools, and we support community events because this is our home too. We’ve seen firsthand how immigrants like us bring diversity and vibrancy to towns across America, strengthening the very core of our communities.

Immigrants have always been essential to this country’s success. From innovation and entrepreneurship to supporting local economies, we help build the America we all love. Our stories are woven into the history of this nation, and we add richness and strength to it.

When you cast your vote, consider what kind of leadership this country needs. Should we support a leader who sows division with lies and dehumanizing rhetoric, or one who values every member of the community? Learning to make authentic Paella Valenciana was an enriching and culturally invigorating experience. We gathered an enthusiastic group of individuals, all eager to dive into the rich culinary traditions of Valencia. Together, we delved into every essential aspect of this iconic dish, from selecting the perfect rice to mastering the traditional cooking techniques. The hands-on experience not only sharpened our culinary skills but also deepened our appreciation for Valencian culture and its passionate people.

Our group embraced the process with enthusiasm, carefully sourcing authentic ingredients like the prized "Arroz de Valencia" and the freshest local produce. We learned about the significance of each ingredient and the meticulous steps involved, from creating a flavorful sofrito to achieving the perfect socarrat. The camaraderie and shared passion in the kitchen made the learning journey all the more memorable, creating a bond that reflected the communal spirit of paella itself.

By the end of the session, our newfound knowledge and skills would surely make the people of Valencia proud. We didn't just learn to cook paella; we immersed ourselves in a tradition that speaks volumes about the heart and soul of Valencian culture.

Tomorrow, 6/19, at 11am is our free paella cooking class at Castaneda's Marketplace.

First-come first-serve for the first 12 interested in learning how to make an authentic Paella Valenciana.

Registration starts at 10:30am, the only requirement is that you have a Facebook or Instagram account, groups larger than two not permitted. Class should take about two hours by the time paella is done and ready to taste.

From the depths of the financial crisis to the trials of wildfires and the unyielding grip of a pandemic, we've remained steadfast in our commitment to honoring those who served.

Thanks to the unwavering support of Paella Guy by our incredible local community, we've been able to keep this vital tradition alive. But it's not just about the food—it's about the bonds formed, the stories shared, and the friendships forged over countless cups of coffee and hearty meals.
