Philly Cheesesteak Loaded Fries for dinner tonight! This meal illustrates my favorite part of cookbooks. You are taught how and encouraged to substitute ingredients! You learn to cook. 😏 Tonight I’m using a beef arm roast- seared and cooked at high pressure for 2 hours then shredded. I also made my favorite oven fries- soak the potatoes in salt water and then pat them dry before baking with oil at 425 until done. Yes, the soaking and drying are worth it. Lastly I cook down the broth from the roast to make an ‘au jus’ gravy. Happy Friday Dinner!

We came out to the coop last night to a dead chick. They are just over 2 months old so we weren’t expecting this. Nola noticed she was lethargic and wasn’t eating yesterday. Best case scenario: The big girls weren’t letting her get enough food and water. Worst case scenario: an illness of some sort. So today my plans were put aside to clean and scrub the coop. We made sure the chicks got a chance to eat today and everyone got a bit of apple cider vinegar in their water today. One chick was moving slower than the rest, so she is resting in the garage with food, water, and some sugar water to hopefully boost her energy. So far, so good! 🤞🏼

I’m growing Ranunculus for the first time this year. Their corms look like a sea creature and they swell to twice their dormant size when they are pre-sprouted.

Like most things this spring my timing is all off. Ranunculus like it cold, but not too close to freezing. I had intended to have them in the hoop house the beginning of April, but that didn’t happen due to a combination of delayed shipping and procrastination. Thankfully they were in the cold dark basement bathroom pre-sprouting during the very warm weather we’ve had.

Yesterday I planted the Bridal Mix and Salmon varieties. The Cafe Mix will get tucked in today. I’m remaining hopeful that the weather will stay cool enough for these babies to bloom this year. If they don’t I will simply revel in the fact they grew at all in this crazy weather, cry a little, and then learn how to store them and try again next year. Ranunculus are usually treated as an annual in the cut flower world, but if they don’t bloom I’ll definitely try these corms again next year- these beauties are one of the more expensive flowers I’m attempting.

Time for one more cup of coffee and then it’s down to the garden. Have a wonderful Saturday!

Welcome to Joyful Acres Farm! We feature Floral & Farm Goods, as well as custom floral orders, flower bar events, and produce.

We are Andy and Abby Lundgren, it’s a pleasure to meet you! We are high school sweethearts and have been married for 18 wonderful years. I always thought I’d live in the suburbs, but fell in love with a farmer’s son. Almost four years ago we sold our house in town for 10 acres in the bluffs. We are thankful and feel truly blessed to pursue our little farm dream. Thanks for joining us on our homestead journey!
