Don't let anyone make you afraid to put potatoes on the grill. Throw them on whole and let them do their thing, maybe toss in a little butter in the bowl later. Perfectly roast potatoes in half the time.

Last week we got our focaccia on big time. I love that loft bubbly bread, and looking to perfect it for future ventures in food. It takes 24 hours to slow ferment and proof the dough but well worth it. The results were this brisket sandwich we served Saturday. Thanks to everyone coming out and see you next time

Which color do you prefer? Assuming both taste the same and are naturally colored (turmeric ), which one is a more appealing color for a maple mustard BBQ sauce? Is it the nearly florescent yellow or a golden brown? Do any colors give you emotions, even if they're visceral? Southern Smoke and Vermont Maple & Smoke

Catering and food truck serving Southern, Caribbean, and Creole Cajun dishes. We are also small batch producers of BBQ and condiment sauces using pure Vermont maple syrup and local produce.

After working as a chef at many remote lodges in Alaska, Colorado, New Zealand, and the Caribbean, chef Brian Stefan wanted to start his own company showcasing many of the flavors and dishes he discovered along the way. In 2011 he opened Southern Smoke to serve music and food festivals on the East coast from Maine to Florida. In 2012 he moved the business to Burlington Vermont, and that is where he has been based ever since. The produce and fine specialties which pervade the Green Mountains was inspiration for Vermont Maple & Smoke, which uses Vermont maple syrup to produce high quality small batch sauces for retail around the region.
