After working as a chef at many remote lodges in Alaska, Colorado, New Zealand, and the Caribbean, chef Brian Stefan wanted to start his own company showcasing many of the flavors and dishes he discovered along the way. In 2011 he opened Southern Smoke to serve music and food festivals on the East coast from Maine to Florida. In 2012 he moved the business to Burlington Vermont, and that is where he has been based ever since. The produce and fine specialties which pervade the Green Mountains was inspiration for Vermont Maple & Smoke, which uses Vermont maple syrup to produce high quality small batch sauces for retail around the region.
