Today’s is some nostalgic Mexican comfort food! Chorizo & egg tacos were a staple growing up that was quick, cheap, & delicious! 🤤 Sauté some chorizo, add your beaten eggs, cook til done! Serve with warm tortillas, cheese, & pickled jalapeños. 💃🏽❤️‍🔥🌮

If you like turkey sandwiches, I HIGHLY recommend picking up a whole breast to roast for the BEST one you’ve had in a hot minute 🦃🥓🌶️🧀🥐🥬🍅 And these croissants are so buttery & delicious, I could cry tears of joy 🥹 I also added bacon, pepper jack, iceberg, & thinly sliced, salt, & pep’d tomatoes 🤤🤤🤤

Last day in & I had to check out which has a fine selection of food including this crispy chicken sandwich 🐔 that I got with ginger veggies which is a delicious slaw tossed with an amazing ginger sauce. The bun was soft, chicken tenders were crispy, & the ranch and pickles were house made. They also have a grab & go selection of sides, dips, dressings, & casseroles, of which I bought two! Definitely a new go-to restaurant when I’m in the area! 😋

Be still my heart! 💗 I’m in Wilmington for work this week & got to treat myself to my FAVORITE restaurant 🤤 Tonight I got all the specials (minus the soy on the broccolini) & they were absolutely delicious! Last night, I was tired so I got some take out paella & as usual, it did not disappoint. 💫💫💫 Excellent service, phenomenal food, & very gf friendly!!! Check them out if you’re ever fortunate enough to be near by.

Another feast on this 🫡🇺🇸 Local grass fed burgers & brats from on buns 🍔🌭 homemade jalapeño cole slaw with 🤤 Italian pasta salad with pepperoni, brown rice & quinoa rotini, olives, peppers, mozzarella, & a homemade vinaigrette 🫒🌶 and watermelon agua fresca with fresh strawberry slices 🍉🍓

in full swing! 👩🏻‍🍳 cups for an easy grab & go breakfast bite 🥓🍳🧀 Chicken drumsticks, mashed potatoes, & wilted spinach with garlic, onions, & mushroom guts (leftover from hollowing out portobellos last week). 🍗🥔🥬 Meal prep helps me prevent the food anxiety I get when there isn’t something readily available for me to take for lunch or breakfast & working 40 hours a week. Anxiety or not, do you meal prep? What are some of your go-to ideas?

This year’s was a success! 🎄 Christmas Eve charcuterie featuring cured meats from & an baguette to accompany baked Brie, olives, & shrimp cocktail. Christmas Day breakfast sandwiches made with gf frozen waffles & cherry wood smoked bacon. And pork tamales made by yours truly with .mexico masa, homemade guacamole, & pickled jalapeños! 💃🏽 .

I’m obsessed with my new grill that my husband got me for my birthday! 🥰 I even use it to make pasta 😂 Here we have a creamy Parmesan garlic pasta with spinach & mushrooms with gluten free brown rice & quinoa fusilli 🤤🤤🤤 Let me tell you, that grilled chicken & mushrooms really set it off 🍝🍝🍝

Success!!! 😋🍫🍰 My very first Gluten Free Chocolate Cake for my daughter’s high school graduation tomorrow! Dark chocolate cake topped with a dark chocolate sea salt glaze, fresh raspberries, & chocolate shavings. 🎉🎉🎉

Shrimp salad 🍤🍤🍤 A quick, easy, & refreshing lunch on a hot day! One bag of thawed cooked shrimp (on sale at ), , spicy brown mustard, half an English cucumber 🥒, one shallot, the juice of half a lemon 🍋, a handful of cilantro (or whatever fresh herb you like, dill would be amazing), salt & pepper to taste. Served in a romaine lettuce leaf 🥬😋

And tacos there were...🤤🤤🤤 Chicken thighs slow cooked in homemade chicken stock with garlic, onion, fresh habañero, dried pasilla/ancho/guajillo peppers, & spices served on corn tortillas with chopped cilantro, onion, tomato, & queso fresco. For the sides, Spanish flavored (made from lentils 😋) & homemade Mexican slaw.
