Smokes a rolling for tomorrow's employee lunch at UR/Noyes Medical in Dansville. About 5/6 more hours of low & slow, then topped off with more time of resting.
Well the meats are on for tomorrow's Fall Festival at the Pavilion Elementary school. The beef trimmings are also on to make the Tallow for when I wrap. I figure all will be ready to rest in coolers about 3 maybe 4 am. Rest for awhile to bring the temps back down slowly then slice and pull, back on the smoker to hold temps then off to the Festival.
Here we go. Building a coal bed, bring her to temp then add some cherry and the fire won't go out until late Saturday. About a 170 lbs of meat to do in succession. 3 events and one delivery to Alden.
Working on tomorrow's feast at the Friday Night Food Truck Rodeo Batavia . Ribs go on in the morning.
Got the RecTec pellet w/hickory pellets and a added smoke tube fired up tonight. Acouple pork butts for a lunch catering tomorrow, along with smoked mac&cheese and smoked brisket beans.😁

Yep. Rolling the late night smoke again. The number of hours evolved can be tiring but rewarding as well. Enjoying a calm nightly breeze, gazing up into the night star lit sky, listening to the night sounds, even a dog bark way out in the distance. Basically enjoying the evening sights and sounds of what God created. Every bit of relaxing and warm as the times I walked on the beach in NC at night under a moon lit sky listening to the gentle ocean waves roll in. Does more good for the heart and soul that anything city life has to offer. Just saying.😉
