It’s feel Good Friday and I sure feel Good! Did my first Taste of St. Croix this past Thursday and it was an exciting experience! The prep work was a lot! To have food ready for a consistent crowd took a lot of careful planning and preparation! My team did an excellent job with keeping the flow of food, the crowd had us under pressure for that good food! We entered two categories, Appetizer and Local Flare and came second place and then we won third place in Table Presentation! I’m grateful, as this was my first time participating and I came out a winner! The two items we made, I call them Island Mixup & The Royal Crostini! The Crostini had roasted local plantain hummus, tomato jam and basil pesto with a sprinkle of #golddust The Island Mixup - Crispy local pumpkin Arancini, chop chop, jerk chicken and local mango salsa. Oh and of course I made Tumeric ginger cake with my seasoning which was a big hit and my Mutiny Mule Cocktail which had many coming for refills all night! It was a success and we had a great time!!

Great Food With Good Vibes!!
Jamaican Easter Tradition is to eat Bun with Cheese. The bun came from the British tradition of having hot cross buns on Good Friday. We adapted and made it our own. This bun is made with a stout or Malta, has spices such as cinnamon, nutmeg, allspice etc, raisins, blended fruit. The flavor is a little similar to that of a black cake in my opinion but at the same time different. We eat it mostly during the Easter season but is also enjoyed all year round!
Sometimes I have to search to get it here in STX and when I do find it, it’s usually dry so I baked my own ! Can’t wait to slice that can cheese and put a big slab in the middle!!
