Elena’s Enchanted Kitchen is at it again, this beautiful morning y’all! We’ve just finished a batch of our crazy fresh, light, creamy, 7-ingredient HUMMUS!! Guess what Elena’s Enchanted Kitchen will have on special at BOTH the Islands and Tybee farmers’ markets April 6th and 8th? 🤩👌🏼💙🤌🏼🇬🇷🤍😋

📌✒️Dolmades have their own history and some secrets that make them even tastier.😁🤪😋
Their history begins in Ancient Greece. They were made with fig leaves and called them "thria". In fact, Hippolytos, a member of the team that built the Parthenon, depicted on one of the pediments of the temple the goddess Hera tasting this delicious concoction. They appeared over two millenia ago, as a food in Crete at the Minoan palace of Knossos.
For the first time, vine leaves for wrapping dolmades are mentioned, at the banquet set up for Alexander the Great,around 335 BC ,when he conquered Thebes, an ancient town on the Nile River.
The name "dolmas", which means "to fill",or something stuffed “was given to them , during the Ottoman Empire.
At the same time, the Greeks of Asia Minor and Pontus created a vegetarian version of the dolma, today's yalantzi dolmades, i.e. dolmades without meat, but with rice and herbs.🤩😍🇬🇷💙🇬🇷
Political Secrets in dolmades.
During the Enlightenment, (a revolutionary movement )the dolmadaki was used as a means of education. Adamantios Korais (an iconic figure in the movement for Greek independence ) , distributed dolmadaki to the slaves, inside which he had hidden tiny rolls of paper with translated passages from the works of leading European thinkers, giving courage and hope to the enslaved Greeks.
For this reason, dolmades were deemed illegal and subsequently with the liberation of Greece, dolmades take their rightful place again at the Greek table. It is important to remain aware of these histories and connotations, and recognize what each dish or food might represent, along with the stories, is also meant to be enjoyed.
This way by adding olive oil and herbs, they make a delicious concoction suitable for Sarakosti fasting (Lent ).
Dolma holds a top spot among the most unique dishes❤️
