Culinary Wanderlust: A Gastronomical Journey Beyond Imagination at CCT's Food and Travel Expo

Tayabas City, October 24, 2023 – The Bachelor of Science in Tourism Management program at the Colegio de la Ciudad de Tayabas (CCT) has once again showcased its exceptional talents, taking us on an unforgettable gastronomical journey that left our taste buds tingling and our spirits soaring.

Dubbed "Culinary Wanderlust: Discovering Gastronomical Destinations," CCT's Food and Travel Expo, held at the Silungang Bayan, was a culinary odyssey that unfolded on October 24, 2023 in celebration of CCT's 3rd Charter Anniversary. The event brought together food enthusiasts, special guests and secondary schools from Tayabas City and nearby towns to celebrate the rich tapestry of flavors and cultures.

Esteemed guests in attendance included Vice Mayor Rosauro “Oro” Dalida, Councilor Dino Romero, Councilor Elsa Rubio, SK Federation President Art Tristan B. Pontioso, and CCT College Administrator, Dr. Melchor Melo O. Placino. Participating secondary schools were West Palale National High School, Rosario Quesada Integrated National High School, Dapdap Integrated School, and San Roque Parochial School, adding to the vibrancy of the occasion.

Organized by CCT's third-year students as part of their Tourism Product Development subject, the event featured a panel of expert judges led by SK Federation President Art Tristan B. Pontioso. The judging panel also included notable figures such as Mr. Koko P. Pataunia of the Cultural Heritage and Preservation Office, Mr. Rene Boy B. Dalmacion of Kamayan sa Palaisdaan, Ms. Monette Manansala, Manager of 3A Nature Farm Serenity, and Mr. Faustino P. Calabano of KD's Kambingan.

CCT students put their culinary prowess on display, drawing from their coursework, such as "Philippine Gastronomical Tourism" for second-year BSTM students, under the guidance of Prof. Jhoana Lizette N. Hill, and "Risk Management as Applied to Safety, Security, and Sanitation" for first-year BSTM students, under the expert tutelage of Dr. Florenitte C. de Guzman.

Sharing their culinary expertise were Bryan Permalino who demonstrated how pinais is being prepared. Pinais is a traditional and iconic local dish in Tayabas City that showcases the rich culinary heritage of the town and is deeply ingrained in the culture of the local people. It is essentially a method of cooking that involves wrapping a variety of ingredients, including young coconut meat and shrimp in banana leaves. These parcels are then cooked by simmering or steaming. The use of banana leaves not only imparts a subtle, earthy flavor to the dish but also helps keep the ingredients moist and tender during the cooking process.

Meanwhile, BSTM student Errol Magtibay shared the procedure in cooking p**o bao, a delightful and sweet delicacy that combines the flavors of fluffy steamed rice cake with the rich creaminess of sweetened coconut strips as filling. Kamayan sa Palaisdaan the events major sponsor explained how their best selling Ensaladang Pako is prepared.

The heart of the expo was the culinary competition, an indulgent feast for the senses. Dishes like Beef Hulma from Region XIV - BARMM, Pinangat from Region IV-A, and Region VII's Pork Humba earned top accolades. Region VI's Chicken Inasal emerged as the highest income earner, closely followed by Region V's Chili Ice Cream and Region IV-A's Pilipit at Butchi. It was a celebration of not just flavors but also culture and creativity, promising all attendees an unforgettable culinary adventure.

In her speech, the Dean of the School of Business and Management Education, Dr. Florenitte C. de Guzman explained that culinary wanderlust is the desire to explore the world through its food. It's the quest for unique flavors, ingredients, and the stories that come with them. It's about venturing to gastronomical destinations where culinary traditions are celebrated and where every meal is a journey in itself.

Indeed, this whole day activity left its mark on the hearts and palates of all those in attendance, symbolizing the dedication and passion of CCT's Tourism Management program. This expo was more than just an event; it was a remarkable journey that allowed us to savor the essence of the Philippines, one delicious dish at a time.
