Ingredients:
Baby cucumber
Cucumbers
Red orange yellow sweet peppers
Cumin
Dry parsley
Black pepper
Salt
Dry chili pepper flakes
Mixed dry herbs
Honey
Olive oil.
Preparation:
Place the cucumber, peppers, scallion, and onion in a salad bowl. Prepare a vinaigrette by mixing the remaining ingredients.
Serve:
Pour the vinaigrette over the salad.

HIP HOP Café Mini Fried Chicken Sandwich via Sunny Anderson
Ingredients:
- Marinade/Batter
2 boneless, skinless chicken breasts
2 cups buttermilk
1/2 cup hot sauce
2 tablespoons hot paprika
Kosher salt and freshly ground black pepper
Peanut oil, for frying
1 1/2 cups all-purpose flour, plus more for dusting
1/4 cup cornstarch
1 teaspoon baking powder
- Sandwich
2 tablespoons unsalted butter, softened
2 brioche hamburger buns
1/4 cup mayonnaise
1/2 teaspoon Korean BBQ sauce
7 bread and butter pickle slices
Preparation:
-For the marinade/batter:
Use kitchen scissors to cut 6 to 7 small horizontal slits, about 1 1/2 to 2 inches deep, into each chicken breast, to give them the potential for crispiness when fried. Set aside.
-For the chicken:
Whisk together the buttermilk, hot sauce, paprika, a nice pinch of salt, and plenty of grinds of pepper in a medium bowl. Add to a resealable bag or a large bowl along with the chicken and soak for 2 hours at room temperature or overnight in the refrigerator. Bring the chicken to room temperature before frying.
-To fry:
Cast iron frying pan: Heat several inches of oil in a pot or deep-fryer to 375 degrees F.
Remove the chicken from the marinade and pat dry (reserving the marinade), then set aside. Whisk together the flour, cornstarch, and baking powder in a large bowl. Slowly add the marinade liquid while whisking to form a pancake batter consistency. (If you go too far, add more flour or about 2 tablespoons of water, depending on the texture.) Dust the chicken with flour, then dunk in the batter to coat. Dust the chicken again with flour, shake gently, and slowly drop into the hot oil. Fry in batches until cooked through and golden on the outside, about 8 minutes. Remove and season with a pinch of salt and rest briefly on a few scrunched paper towels on a plate.
For the sandwich: Butter both sides of each bun. Toast lightly in a grill pan or in the oven until lightly golden brown and warm, about 2 minutes.
Stir together the mayonnaise and chipotle in a small bowl. Smear on the cut sides of the bun bottoms, then add the chicken, pickles, and bun tops. Wrap in aluminum foil pouches and let rest for less than 1 minute, then serve.

HIP HOP CAFÉ Chicharrón de Pollo
The official dish of the Dominican Republic that translates to "chicken cracklings" or "crispy fried chicken."
Ingredients:
2- TO 3-POUND FRYING CHICKEN
¼ CUP FRESHLY SQUEEZED LIME
JUICE
1 TABLESPOON GINGER SOY
SAUCE
SALT TO TASTE
1½ CUPS VEGETABLE OIL FOR FRYING
1 CUP FLOUR
1/2 CUP CORNSTARCH
½ TEASPOON PAPRIKA
FRESHLY GROUND BLACK PEPPER
TO TASTE
LIME SLICES FOR GARNISH
SERVES 4 TO 6
Preparation:
- Clean the chicken and cut it into 16 small pieces by dividing the wings, thighs, breasts, and legs into halves.
- Prepare a marinade from the lime juice, soy sauce, and salt and place the chicken pieces in the marinade.
- Cover and refrigerate for at least 5 hours.
Cook:
- When ready to cook, heat the oil to 325° in a heavy cast-iron skillet.
- Place the flour, paprika, and salt in a plastic bag. Add the chicken pieces a few at a time. Shake them to coat with the flour and seasoning mixture and then fry for about 3 minutes on each side.
- Remove the chicken and place on a rack. Raise the temperature of the oil to 375 degrees and cook for about another six minutes or until the internal temperature reaches 165 degrees and the chicken is golden brown and crunchy.
-Do not fry too many pieces at once as the oil will cool and the frying will take longer.
Serve the chicharrón hot, garnished with the lemon or lime slices. Diners will sq**rt lemon juice on the chicken bits to enhance the flavor.

HIP HOP CAFÉ Sorrell (Makes 1 quart)
2 1/2 CUPS OF DRIED SORREL
JUICE OF ONE ORANGE
1½ TABLESPOONS GRATED
ORANGE ZEST
2½ TABLESPOONS GRATED FRESH
GINGER
1 QUART BOILING WATER
1 CUP OF WHITE SUGAR
1/2 CUP OF BROWN SUGAR
2 TBSP CLOVES
2 CINNAMON STICKS
Preparation:
Place the sorrel in a large crock with the cloves, orange zest, cinnamon, and ginger. Cover with boiling water and let it steep for 24 hours.
Strain the sorrel and add the sugar to the mixture, stirring well. Pour the liquid into a sterilized quart bottle that can be loosely stopped. Allow the bottle to stand for 2 days for the mixture to mature, and then serve the sorrel mixed half and half with water.
You may want to add a generous dose of Mount Gay or another rum to your glass of sorrel over ice.

Uptown Salad
7 scallions, white and green parts, thinly sliced
1 pound ripe cocktail tomatoes, seeded, and diced
1 cucumber diced
1 can (12 to 16 ounces) chickpeas, rinsed, drained, and toasted
1/3 cup chopped fresh parsley
1/3 cup chopped fresh mint leaves
1/3 cup julienned fresh basil leaves
1/2 cup freshly squeezed lemon juice (4 lemons)
1 tablespoon minced garlic (3 cloves)
Kosher salt and freshly ground black pepper
1/2 cup good olive oil
8 ounces good feta cheese, ½-inch-diced
Toasted pita bread, for serving
Place the scallions, tomatoes, cucumber, chickpeas, parsley, mint, and basil in a large salad bowl and toss to combine.
In a small bowl or measuring cup, whisk together the lemon juice, garlic, 2 teaspoons salt, and 1 teaspoon pepper. Slowly whisk in the olive oil to make an emulsion. Pour the dressing over the salad, tossing gently to coat all the vegetables. Add the feta, sprinkle with salt and pepper, and toss gently. Serve the salad with the toasted pita bread.

* 1 lime, finely zested and then juiced
* 1 teaspoon finely grated ginger
* 2 cups mango
* 2 cups firm bananas
* 2 cups blood oranges
* 2 cups pineapple pieces
* 1 pint strawberries, halved or quartered depending on size
* 2 teaspoons grated fresh coconut toasted
* 3 tablespoons honey
1/4 cup light rum
Boogie Down Branzino Recipe
Vegetable oil cooking spray
2 (1 1/2-pound) whole branzino (or striped bass or red snapper), cleaned, heads removed and filleted
Kosher salt and freshly ground black pepper
1 tbsp All purpose seasoning
1 tbsp Cajun seasoning
2 lemons, zested
1/4 cup green seasoning
2 tablespoons chopped fresh thyme leaves
1 cup fresh parsley
2 lemons, thinly sliced
1/2 cup fresh lemon juice
1/2 cup melted butter
This dish can be prepared either on an outdoor grill or in the oven. Preheat the oven to 450 degrees F. Meanwhile, score the fish on both sides and insert green seasoning, salt, pepper, all purpose seasoning,,and Cajun seasoning into the slits, inside the fish and all over. Let fish sit in fridge 1 hr. Place thyme, parsley, and sliced lemons inside fish. Brush fish with butter and lemon zest . Cook in oven 20 min then 5 min in broiler. Serve immediately.
* Salmon – 2 lb (skinless)
* Scallion - 2 chopped
* Bell Pepper - 1/2 cup
* Paprika- 1 tbsp
* Cayenne Pepper - 1/2 tsp
* All Purpose Seasoning - 1 tbsp
* Old Bay Seasoning -1 tbsp
* Cheddar Cheese - 1 cup diced into cubes
* Breadcrumbs – 1/4 cup panko breadcrumbs
* Salt – a pinch of salt
* Pepper – a pinch of black pepper
* Lemon Juice – 2 tbsp lemon juice
* Lemon Zest – 1 tsp lemon zest (optional)
* Parsley – a handful of fresh parsley
* Oil – 1 tbsp oil
* Garlic – 1 garlic clove or 1/4 tsp garlic powder
Mac N Cheese
GARLIC MASHED POTATOES
SERVES 4 TO 6
1½ pounds fingerling or Yukon Gold potatoes, peeled
2 cups milk
1 cup heavy cream
8 elephant garlic cloves
2 fresh thyme sprigs
Freshly grated nutmeg
1 tablespoon olive oil
2 tablespoon unsalted butter
1 tablespoon freshly grated cheddar cheese
Kosher salt and freshly ground black pepper
1. Combine the potatoes, milk, cream, garlic, and thyme in a large saucepan and bring to a boil. Reduce the heat slightly and simmer until the potatoes are tender, 20 to 25 minutes. Drain, reserving the cooking liquid
2. Transfer the potatoes and garlic to a medium bowl and mash with a fork, adding the nutmeg, olive oil, butter, and Parmesan. Add about half the reserved cooking liquid, mixing well, then add additional cooking liquid as necessary until the potatoes are the consistency you like. Season with salt and pepper to taste and serve hot.
Whiting w/ Mac n Cheese
CARIBBEAN GRAPEFRUIT
3 LARGE RIPE GRAPEFRUIT
6 TABLESPOONS BROWN SUGAR
6 TABLESPOONS DARK BARBADOS
RUM
SERVES 6 Preheat the broiler. Cut the grapefruit into halves and prepare them for eating, being careful to remove the membrane so that each section slides out onto a spoon. Place the grapefruit halves in a baking pan. Sprinkle 1 tablespoon of sugar and pour I tablespoon of rum over each grapefruit half.
Place the grapefruit under the broiler for 5 minutes, or until the sugar has caramelized. Serve hot as an appetizer or dessert.

3 Garlic Cloves, minced
2 Thyme Sprigs
1 Rosemary Sprig
1 tbsp Lemon Juice
2 tbsp Honey

Brown the crabmeat in the oil with the scal-
lions, 1 teaspoon of the garlic, and the crumbled thyme.
In a stockpot, brown the diced bacon. Wilt the spinach in the rendered bacon fat. Add the okra, cover with the water, and add salt and freshly ground black pepper to taste. Cook for 20 minutes, stirring constantly with a whisk. When done, add the crabmeat, remaining garlic, and chile that has been pricked with a fork. Continue to cook over low heat for 20 minutes, stirring occasionally. When done, add the lime juice, whisk it through thoroughly, and serve hot.
