My sisters are in town, so I whipped up some appetizers that'll make our catch-up night even more fun! Think seared ahi tuna on Asian slaw; portobello with goat cheese and fresh thyme, sundried tomato with mozzarella and fresh basil upside down tarts; and of course, apple and pear with Brie for good measure. Cheese, wine, and my sisters - the perfect combo!

One of my favorite ways to sneak in a lot of protein to keep me full and satisfied is this cottage cheese flatbread/wrap. It’s so delish!

1 cup cottage cheese
2 eggs
1/4 Parmesan cheese
Everything But the Bagel Seasoning, Italian seasoning, or any seasoning that you fancy.
Measure with your heart.
Blend in processor until you achieve a smooth & creamy texture. Pour evenly on a parchment paper lined baking sheet and bake at 375 degrees for 25-30 min. Let cool and wrap or top with any of your favorites!

Meal Prep Sunday! Busy schedules don’t always allow for a healthy breakfast to start the day. This takes a few minutes to prep, less than 30 minutes to bake, and you have breakfast all week! For added protein, add cottage cheese to the egg mixture. Easy peasy.

What happens when you combine grilled flank steak, heirloom tomatoes, garlic, cucumbers, red onion, and fresh basil? Panzanella salad!! A flavor fiesta! And let's not forget the butter-garlic croutons to soak up that delicious balsamic and olive oil vinaigrette. This is my go-to summer salad! 😋
