The 10 minute lockdown chocolate cake that changed my life.
No bake
No eggs
No milk

All you need is
220g flour
85g cocoa powder
150g sugar
15ml baking powder

Sift all together and mix well.
Add
130g melted butter
550ml warm water

Mix well.
Place in microwave for 5min. If not cooked add a few more minutes. I cooked mine for 8 minutes.

Ganache on top
160g chocolate
15ml butter
15ml milk
Place in microwave for 30 seconds stir and repeat till smooth and silky

Today I made this old school Cornbread to go with our braai.

It was a lovely memory from my childhood that I rediscovered.

Try it, it is super simple.

All you need is the following:
☝️500g packet of self-raising flour
☝️tin of creamed sweetcorn
☝️tin of milk (use the empty sweetcorn tin)

Place all the ingredients in a bowl. Mix well. Place in a well greased loaf tin and bake in a pre-heated oven for 1hour @ 180'C.

During lockdown I've had to be creative when cooking for my family. I've also tried to avoid having lots of leftovers in the fridge that no one ends up eating.

So today I made this lovely Spaghetti Greek Salad with extra Avo and Ham.

Try it, it was amazing. All you need is some cooked spaghetti from the meal before, all the ingredients for a basic greek salad, some avocado and ham. Drizzle with olive oil and enjoy!
