I attempted an Italian Antipasto Salad for a corporate client's lunch today - and it was served on a bed of basil pesto orzo. The other meal was an ultra creamy salami, portabellini mushroom, basil pesto and garlic pasta. Got great feedback afterwards.

I needed extra basil pesto for my creamy salami and mushroom pasta today and decided to make it myself. I blitzed fresh basil, roasted nuts (I used almonds and cashews), garlic cloves, parmesan cheese and olive oil - and then I added a dash of lemon juice.
