"Savory Steak & Potato Breakfast Hash
2 cups diced potatoes (about 2 medium potatoes)
1 tablespoon olive oil
1 cup cooked steak, diced (leftover steak works great)
1 small onion, diced
1 bell pepper, diced (any color)
2 cloves garlic, minced
4 large eggs
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
1. In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.
2. Add the diced onion and bell pepper to the skillet and cook for an additional 5 minutes, until the vegetables are softened.
3. Stir in the minced garlic and cook for another minute until fragrant.
4. Add the diced steak to the skillet and cook until heated through, about 2-3 minutes. Season with salt and pepper to taste.
5. In a separate pan, fry the eggs to your liking (sunny-side up, over-easy, etc.).
6. Serve the steak and potato hash on plates, topped with a fried egg and garnished with chopped parsley if desired.
