12 oz rigatoni pasta

1/2 cup basil pesto (store-bought or homemade)

1/2 cup ricotta or burrata cheese

2 tbsp fresh lemon juice

1 tsp lemon zest

1/4 cup grated Parmesan cheese

2 tbsp toasted pine nuts

1 tbsp olive oil

Salt & cracked black pepper to taste

Fresh basil leaves, for garnish

Directions 👩‍🍳:

Boil the Pasta: Cook rigatoni in salted water until al dente. Drain and set aside, reserving 1/4 cup of pasta water.

Make the Sauce: In a large bowl, whisk together pesto, lemon juice, lemon zest, olive oil, and Parmesan.

Toss & Combine: Add warm pasta and a splash of reserved pasta water. Stir until well coated and creamy.

Plate It: Serve with a dollop of ricotta or burrata on top.

Garnish & Serve: Sprinkle with pine nuts, cracked pepper, and fresh basil.

Mediterranean Lamb Shanks with Lemon and Oregano

Ingredients:

4 lamb shanks

3 tablespoons olive oil

1 large onion, chopped

4 garlic cloves, minced

2 lemons (juice and zest)

1 cup chicken or beef broth

1/2 cup dry white wine

2 tablespoons dried oregano (or fresh, chopped)

1 teaspoon ground cumin

1/2 teaspoon paprika

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 sprigs fresh rosemary (optional)

Fresh parsley, for garnish

Instructions:

1. Preheat Oven: Preheat your oven to 325°F (160°C).

2. Sear the Lamb Shanks: Heat 2 tablespoons of olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Season the lamb shanks with salt, pepper, and paprika. Sear them on all sides until browned, about 3-4 minutes per side. Remove and set aside.

3. Sauté Aromatics: In the same pot, add the remaining olive oil and cook the chopped onions until soft and translucent (5 minutes). Add the minced garlic and cook for another 1-2 minutes.

Sipheka Garlic Parmesan Chicken Alfredo Pasta 🍝🍗

Ingredients:
For the Chicken:

2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
Salt and pepper
1 tbsp grated Parmesan

For the Alfredo Sauce:

1 cup heavy cream
1/2 cup grated Parmesan cheese
4 tbsp butter
3-4 garlic cloves, minced
Salt and pepper
1/2 tsp Italian seasoning
1/2 cup pasta water (reserved from boiling pasta)

For the Pasta:

230g fettuccine or your favorite pasta
Salt

Instructions:

Cook the pasta:

1. Bring a large pot of salted water to a boil. Add the pasta and cook it until soft with a little bit. Reserve 1/2 cup of pasta water before draining.

Cook the chicken:

2. While the pasta cooks, season the chicken breasts with garlic powder, onion powder, salt, and pepper.

3. Heat olive oil in a pan over medium-high heat.

4. Cook the chicken for about 6-7 minutes per side or until fully cooked. Remove from the pan and let it rest for a few minutes, then slice it thinly.

Make the Alfredo sauce:

5. In the same pan melt butter over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant, but not browned.

6. Pour in the heavy cream and bring to a simmer. Let it simmer for about 5 minutes to thicken slightly.

French Onion Beef Short Rib Soup 🥣
I started this soup - a huge pot.
It's like food for the soul.

Ingredients:
- 2 tablespoons olive oil
- 500gr beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- 1 bay leaf
- Salt and pepper to taste
- 4 slices of French bread
- 1 cup shredded Swiss or Gruyère cheese

Instructions:
1. In a large pot, heat olive oil over medium heat.
2. Season the beef short ribs with salt and pepper, then sear them in the pot until browned on all sides, about 4-5 minutes each side. Remove the ribs and set aside.
3. In the same pot, add the sliced onions. Cook, stirring occasionally, until they caramelize and turn golden brown, about 15-20 minutes.
4. Add the minced garlic and cook for another 1-2 minutes until fragrant.
5. Return the beef short ribs to the pot and pour in the beef broth. Add balsamic vinegar, thyme, bay leaf, and more salt and pepper if desired.
6. Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, until the meat is tender.
7. Preheat your oven grill. While the soup is simmering, place the French bread slices on a baking sheet and toast them lightly in the oven.

Method

Heat oil in a pan over medium heat and brown chicken livers for 3 minutes
Transfer the browned livers to a plate and set aside
Add onions,garlic, mushrooms sundried tomatoes , paprika, ground cumin, seven colours grill seasoning, chilli flakes, mixed herbs, fresh cream and let it simmer for 3 minutes and return browned livers to the pot, season with salt and pepper and cook for 10 to 15 minutes minutes

Ingredients:

2 tbsp olive oil
4 lamb shanks, trimmed of excess fat
1 onion, chopped
2 large carrots, chopped in large pieces
2 celery ribs, chopped in large pieces
3 garlic cloves, smashed
2 tbsp tomato paste
3 cups beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried oregano
2 bay leaves
1 tsp salt
1 tbsp cornstarch (for thickening)

Instructions:

Sear the Lamb Shanks: Set the Instant Pot to sauté mode. Add olive oil and sear lamb shanks for 7-10 minutes, until browned on all sides. Set them aside.
Cook Vegetables: Add the chopped onion and sauté for 5-7 minutes until softened. Then add carrots, celery, and garlic, cooking for 2-3 more minutes.
Add Tomato Paste: Stir in tomato paste, cooking for 2 minutes.
Add Broth & Seasonings: Add beef broth, Worcestershire sauce, thyme, oregano, bay leaves, and salt. Stir well.
Pressure Cook: Return lamb shanks to the pot, tucking them into the liquid. Close the lid and cook on high pressure for 50 minutes. Let pressure release naturally for 10 minutes, then manually release the remaining pressure.
Thicken the Sauce: Remove the lamb shanks. Mix cornstarch with 1/4 cup water, add to the sauce, and let simmer until thickened.
Serve: Plate the lamb with mashed potatoes or vegetables, topped with the sauce.

1 caramelized onion
1 egg
4 cloves garlic, minced
1/4 cup chopped fresh parsley

2 tbsp milk
1 tbsp Worcestershire sauce
1/4 cup breadcrumbs
1/4 cup grated Gruyere cheese
1/4 tsp ground black pepper

Gravy:

1 tbsp olive oil
2 tbsp butter
2 sweet onions, thinly sliced
3 tbsp all-purpose flour
2 cups beef stock
2 tbsp Worcestershire sauce
1 cup grated Gruyere cheese

Salt and pepper to taste

Instructions:

Caramelize onions in a skillet with olive oil and butter on low heat for 45 minutes. Set aside half.
Stir flour into the skillet, then whisk in beef stock, Worcestershire sauce, cheese, and parsley. Cook until thickened. Season.
Preheat oven to 350°F.

1/2 cup heavy cream

For the Honey Garlic Sauce:
1/3 cup honey
1/4 cup soy sauce (low sodium)
3 cloves garlic (minced)
1 tbsp apple cider vinegar
1/2 tsp red pepper flakes (optional, for heat)
1 tbsp cornstarch + 2 tbsp water (to thicken)

For Garnish:
1/4 cup Parmesan cheese (grated)
Chopped parsley or basil
Extra red pepper flakes (optional)

Directions:
Cook the Beef Sausage:
Heat olive oil in a large skillet over medium-high heat.
Add the sliced beef sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
Prepare the Honey Garlic Sauce:
In a bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and red pepper flakes.
Cook the Pasta:
In the same skillet, add chicken broth and heavy cream.
Stir in the pasta, bring to a boil, and let it simmer until al dente, about 10-12 minutes.
Thicken the Sauce:
Pour the honey garlic sauce into the skillet.
Stir in the cornstarch slurry (cornstarch mixed with water) and let it simmer for 2-3 minutes until the sauce thickens.
Combine Everything:
Return the cooked beef sausage to the skillet and toss with the pasta.
Cook for 1-2 minutes, allowing the sauce to fully coat the pasta and sausage.
Serve & Enjoy:
Garnish with Parmesan cheese, fresh parsley, and extra red pepper flakes if desired.
