Music: Zwai Mbula plays high-energy marimba and percussion combining the traditional African music with modern pop, Afro Jazz and World music. Originally Zwai comes from Guguletu Township in Cape Town and grew up with the marimba music. He started playing at the age of 12 when he joined and led Siyavuka Cultural Group at the local community centre. The group won the Shell Road to Fame Talent Show in South Africa in 1996. Since then Zwai has been educated at The College of Music at The University of Cape Town and has played in a variety of bands with different styles of music.

RIBEYE STEAK WITH CARAMELIZED ONIONS AND MASHED POTATOES
Indulge in the rich and savory flavors of a perfectly seared ribeye steak topped with sweet caramelized onions, served alongside creamy mashed potatoes. This classic dish is perfect for a special dinner.
Ingredients:
For the Ribeye Steak:
2 large ribeye steaks (1.5-2 inches thick)
2 tbsp olive oil
Salt and black pepper to taste
2 cloves garlic, minced
1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
2 tbsp butter
For the Caramelized Onions:
2 large onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
1 tbsp brown sugar
1/4 cup balsamic vinegar
Salt and pepper to taste
For the Mashed Potatoes:
4 large potatoes, peeled and cubed
1/4 cup butter
1/2 cup milk
Salt and pepper to taste
Fresh chives, chopped (for garnish)
Directions:
Step 1: Caramelize the Onions
Heat the butter and olive oil in a large skillet over medium heat.
Add the sliced onions and cook, stirring occasionally, until they begin to soften, about 10 minutes.
Stir in the brown sugar and balsamic vinegar. Continue to cook, stirring occasionally, until the onions are deeply caramelized and jam-like, about 20-25 minutes.
Season with salt and pepper to taste. Remove from heat and set aside.
Step 2: Prepare the Mashed Potatoes
Boil the cubed potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
Add the butter and milk to the potatoes and mash until smooth and creamy.
Season with salt and pepper to taste.
Keep warm until ready to serve. Garnish with fresh chives if desired.
Step 3: Cook the Ribeye Steaks
Heat olive oil in a heavy skillet or cast-iron pan over high heat until very hot.
Season the ribeye steaks generously with salt and black pepper.
Add the steaks to the hot skillet and sear for 3-4 minutes on each side for medium-rare, or adjust the time based on your desired level of doneness.
In the last minute of cooking, add the minced garlic and thyme to the skillet. Spoon the melted butter over the steaks.
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
Step 4: Serve
Plate the ribeye steaks and top with a generous portion of caramelized onions.
Serve alongside the creamy mashed potatoes.
Serve hot and enjoy this classic and comforting meal.

Chicken:

2 chicken breasts 🍗

1 tbsp olive oil 🫒

1 tsp dried mixed herbs 🌿

Salt & pepper

Pesto Pasta:

150 g pasta 🍝

2 tbsp pesto sauce 🌿

2 tbsp cream 🥛

Salt & pepper

Roasted Potatoes:

2 medium potatoes 🥔, cubed

1 tbsp olive oil 🫒

1/2 tsp dried rosemary 🌿

Salt & pepper

👩‍🍳 Instructions:

Roast the potatoes: Preheat oven to 200°C (390°F). Toss cubed potatoes with olive oil, rosemary, salt, and pepper. Roast for 25–30 minutes until golden and crispy.

Cook the pasta: Boil pasta according to package instructions. Drain and toss with pesto and cream.

Grill the chicken: Season chicken breasts with herbs, salt, and pepper. Heat olive oil in a skillet or grill pan over medium heat. Cook 5–7 minutes per side until fully cooked.

Serve: Plate grilled chicken with creamy pesto pasta and roasted potatoes on the side.

Ingredients:

For the Butter Chicken:

1.5 lbs (680g) boneless, skinless chicken thighs, cut into chunks

1 cup plain yogurt

2 tablespoons lemon juice

1 tablespoon garam masala

1 teaspoon turmeric

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon grated ginger

4 cloves garlic, minced

Salt to taste

For the Sauce:

2 tablespoons butter

1 onion, finely chopped

1 can (14 oz) tomato purée

1 cup heavy cream

Ingredients :

1 bunch of spinach
½ onion finely chopped
1 cup milk
2 tbsp cake flour
1 tsp minced garlic
1 tsp seven colours grill seasoning
½ cup mushrooms sliced
2 tbsp butter
Salt and pepper

Method

Steam the spinach for 2 minutes, drain and set aside

In a large pan melt butter, add onion and garlic, mushrooms, cook until delicate/soft. Add in flour.. Pour in the milk, stirring continuously until the white sauce becomes thick

Add steamed spinach to the white sauce, seasoning stirring gently to combine. Enjoy!

Tuna Avocado Egg Salad

Ingredients:

1 cup canned tuna (drained)

1 avocado, sliced

2 boiled eggs, halved

1 cup cherry tomatoes, halved

A handful of black olives

Fresh lettuce leaves

1 tsp sesame seeds (white & black mix)

Fresh dill for garnish

Salt & pepper to taste

Instructions:

1. Arrange lettuce leaves in a bowl.

2. Add avocado slices, boiled eggs, cherry tomatoes, and olives.

3. Place tuna chunks in the center.

4. Sprinkle sesame seeds, salt, and pepper.

5. Garnish with fresh dill and serve immediately.
