Originally Zwai comes from Guguletu Township in Cape Town and grew up with the marimba music. He started playing at the age of 12 when he joined and led Siyavuka Cultural Group at the local community centre. The group won the Shell Road to Fame Talent Show in South Africa in 1996. Since then Zwai has been educated at The College of Music at The University of Cape Town and has played in a variety of bands with different styles of music.

🍝 Creamy Cajun Chicken Pasta 🌶️

Ingredients
For the Pasta:
12 oz pasta (penne or fettuccine)
For the Sauce:
2 tbsp olive oil
1 lb chicken breast, sliced
1 onion, chopped
3 cloves garlic, minced
1 yellow bell pepper, diced
1 tbsp Cajun seasoning
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper, to taste
Chopped green onions or parsley for garnish

Instructions
1️⃣ Cook the Pasta: Begin by boiling the pasta according to the package instructions. Once cooked, drain and set aside.
2️⃣ Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken breast and cook until it’s golden brown and fully cooked. Remove from the skillet and set aside.
3️⃣ Add Vegetables: Using the same skillet, toss in the chopped onion, minced garlic, and diced yellow bell pepper. Sauté until they become tender.
4️⃣ Make the Sauce: Lower the heat and stir in the Cajun seasoning, heavy cream, and grated Parmesan cheese. Mix until the cheese is melted and the sauce thickens.
5️⃣ Combine: Return the cooked pasta and chicken to the skillet, tossing everything together until well coated in the creamy sauce.
6️⃣ Serve: Garnish with chopped green onions or parsley before serving. Enjoy your delicious, creamy meal!

Steak and Shrimp Pasta Delight
Ingredients:

8 oz penne pasta
1 lb sirloin steak, cut into strips
1 lb shrimp, peeled and deveined
2 tbsp olive oil
1 tbsp red pepper flakes
4 cloves garlic, minced
1 cup diced tomatoes
Salt and pepper to taste
Fresh basil for garnish
Directions:

Cook the penne pasta according to package directions. Drain and set aside.
In a skillet, heat olive oil over medium-high heat. Add the steak strips, seasoning with salt, pepper, and red pepper flakes. Cook for 4-5 minutes until browned.
Add garlic and shrimp to the skillet, cooking for another 3-4 minutes until shrimp is pink.
Stir in diced tomatoes and cooked pasta, mixing well.
Serve hot, garnished with fresh basil.

Spiced Coconut Basil Chicken with Rice

Ingredients:

1 lb (450g) chicken thighs or breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 tablespoon ginger, minced
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon turmeric
1 can (14 oz) coconut milk
1 tablespoon soy sauce
2 tablespoons fish sauce (optional)
1 tablespoon brown sugar
1 cup fresh basil leaves, roughly chopped
Salt and pepper, to taste
Cooked jasmine rice or basmati rice, for serving
Fresh lime wedges, for garnish

Directions:

Cook the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove from the pan and set aside.
Sauté the aromatics: In the same pan, add the chopped onion, garlic, and ginger. Cook for 3-4 minutes until softened and fragrant.
Add the spices: Stir in the curry powder, cumin, paprika, and turmeric. Cook for 1 minute to toast the spices.
Make the sauce: Pour in the coconut milk, soy sauce, fish sauce (if using), and brown sugar. Stir well, then return the chicken to the pan. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 15-20 minutes, allowing the flavors to meld.
Add the basil: Stir in the fresh basil leaves and simmer for another 2 minutes. Season with salt and pepper to taste.
Serve: Spoon the spiced coconut basil chicken over hot rice. Garnish with fresh lime wedges for a zesty kick.
