Orange Cheesecake:
Ingredients:
For the Base:
200g digestive biscuits (or graham crackers)
100g unsalted butter, melted
For the Cheesecake Filling:
500g cream cheese, softened
200g powdered sugar
Zest of 2 oranges
Juice of 1 orange
300ml heavy cream, whipped to soft peaks
1 tsp vanilla extract
For the Topping:
150ml orange juice
2 tbsp sugar
2 tsp cornstarch, dissolved in 2 tbsp water
Orange slices or zest (for garnish)

Instructions:
1. Prepare the Base:
1. Crush the digestive biscuits into fine crumbs.
2. Mix the crumbs with melted butter until combined.
3. Press the mixture into the base of a springform pan (8-inch/20cm). Chill in the refrigerator for 30 minutes.
2. Make the Filling:
1. In a large bowl, beat the cream cheese and powdered sugar until smooth.
2. Add the orange zest, orange juice, and vanilla extract. Mix well.
3. Fold in the whipped cream gently until fully incorporated.
4. Pour the filling over the chilled base and smooth the top. Refrigerate for at least 4-6 hours, or until set.
3. Prepare the Orange Topping:
1. In a small saucepan, heat the orange juice and sugar over medium heat.
2. Stir in the cornstarch mixture and cook until thickened. Let it cool completely.
3. Pour the cooled topping over the set cheesecake.
4. Garnish and Serve:
Decorate with orange slices or zest.
