If you are a lover of hot chocolate, our Hot Ciok is delicious. It makes a richer and slightly thicker hot chocolate than the regular powders that you get.

INGREDIENTS:
- 1½ cups (180g) all-purpose flour - ½ cup Hot Ciok chocolate powder
- 3/4 teaspoon baking powder
- ½ teaspoon baking soda
- 120g salted butter - room temp - 1 cup light brown sugar
1 large egg
- 1½ tsp vanilla essence
- 1/2 cup chocolate chips
- A small bag of mini marshmallows
- White chocolate for decorating
DIRECTIONS:
1. Preheat the oven to 190°C and then line a baking tray with baking paper.
2. In a medium bowl whisk together the flour, hot chocolate powder, baking powder & baking soda. Set aside.
3. In the bowl of your stand mixer (with the paddle attachment), you can also use a handled mixer - beat your butter and sugar together on a med speed for ±2 mins until fluffy.
4. Add the egg & vanilla essence and beat until well combined, don't forget to scrape down the sides of your bowl as you go.
5. Add the flour mixture & mix on low speed just until combined then mix in the chocolate chips. 6. Using your hand create balls of cookie dough (about the size of a golf ball) then place them on the baking sheet about 6cm apart & press the balls down slightly. Bake for ±12 mins.
7. Remove the cookies from the oven, place a few extra chocolate chips on the surface, allow them to melt slightly then add marshmallows to each one. 8. Melt some white chocolate & use it to drizzle on top of each cookie for added Instagram effect!

Lemon Curd Pandoro Trifle topped with homemade Italian Meringue
INGREDIENTS: Serves 8
CAKE:
1 X 1kg Pandoro
LIMONCINO SYRUP:
120ml Limoncino
200g caster sugar
80mls water
1 lemon - juiced
CREAM:
500mls whipping cream
±1 tsp icing sugar
LEMON CURD:
500gr - You can make or buy it
ITALIAN MERINGUE:
80mls water
½ tsp cream of tartar
2 cups caster sugar
4 egg whites -room temp
DIRECTIONS:
1. Syrup: In a small pot heat the sugar and water over a low heat, cook for 10 mins, or until syrupy then pour it into a bowl and add the lemon juice & Limoncino. Stir & set aside.
2. Italian Meringue: Place the water, cream of tartar & 1 cup of sugar in a small pot over a high heat. Cook, stirring until the sugar has dissolved. Reduce the heat to a simmer & cook for ±5 mins.
3. Place the egg whites in a stand mixer (whisk attachment) & mix on high until stiff peaks form. While it’s mixing, slowly add the remaining sugar, 1 TBL at a time. Then gradually add the hot sugar syrup in a thin, steady stream & whisk for a further 7 mins until the meringue is thick, & glossy.
4. Cream: Pop the cream and icing sugar in a bowl & beat on high until soft peaks form. Set aside.
5. Lemon Curd: Open a jar :)
6. To assemble: Cut the Pandoro into fat rectangular chunks about 5 cm long. Place them in a circular pattern all along the bottom of the trifle dish.
7. Drizzle the Pandoro with Limoncino syrup.
8. Spoon over the whipped cream & then top with a layer of lemon curd.
9. Dollop the Italian meringue on the top.
