PASTA SALAD RECIPE

250g cooked pasta
1 small cucumber, deseeded and chopped
2 tomatoes, chopped
1/2 red pepper, chopped
1/2 yellow pepper, chopped
1 red onion, chopped
2 tbs cooking oil
3 tbs sundried tomato pesto
1tsp chilli flakes(optional)
1tsp garlic
1tsp seasoning, or any spice of your choice
A handful, chopped parsley
Honey, to balance the acidity
Salt to taste

Heat oil over medium heat, sauté garlic and spice until fragrant. Add pesto and mix well. Reduce the heat, simmer for 3minutes, drizzle with a honey and salt to taste. Remove from heat.

In a salad bowl, mix pasta, tomatoes, peppers, cucumber, onion and parsley. Add the sauce and mix well, Enjoy!

Warm potato salad🍲

You will need:

2 kg potatoes
1 pack shoulder bacon, chopped and cooked
1 tbs whole grain mustard
1/2 red onion, julliened
1/2 cup mayonnaise
250ml sour cream
250g fennel, chopped
1 tbs cooking oil
1 tbs honey
1 tbs cajun seasoning
A handful finely chopped

Method:
Boil potatoes in salted water until soft, remove from pot and put in a baking dish. Drizzle with cooking oil, add chopped fennel and season with spice and mix well. Bake in the oven until potatoes are crispy.

In a separate bowl, mix mustard, sour cream, mayonnaise and honey. Mix well, toss the potatoes in the mixture while hot, add bacon, red onion and dill . Serve warm
