Zucchini Fries šŸ¤¤

INGREDIENTS:
Olive oil
Zucchini
Grated Parmesan cheese
Garlic salt
Onion powder
Paprika
Pepper

DIRECTIONS:
Slice zucchini and then toss in olive oil.
Combine rest of ingredients and roll the zucchini in it.
I added the extra seasoning to the top after I placed them on the baking sheet.
Bake at 400 for 15min then Broil on high for 2min

OVEN BAKED POTATO CAKES

800 g potatoes, peeled and rinsed
2 eggs
2 tablespoons onion, finely chopped
salt and fresh cracked pepper
1 cup pancetta (or ham, baconā€¦), diced
2 tablespoons butter
1 tablespoon milk
2 tablespoons chives, chopped
4 tablespoons breadcrumbs or Panko
Method
Cook potatoes in plenty of salted water until cooked through. Meanwhile gently fry onion until translucent and set aside.
In a large bowl, mash the potatoes and combine with the eggs, pancetta, onions, butter and chives. Season with salt and pepper to taste. Adjust the texture with a bit of milk if necessary.
Preheat your oven to 190Ā°C and line a baking sheet with parchment paper.
On the baking sheet, using a ring mold, sprinkle a layer of breadcrumbs, then scoop potato mixture to shape the cakesā€”about 1Ā½ inch thick. Press down slightly with the back of a spatula and finish with another thin layer of breadcrumbs. Remove the ring mold and repeat the process.
Bake in the oven at 190Ā°C for 10 minutes, or until golden, and serve the baked potato cakes warm, with a sprinkle of grated parmesan on top. Enjoy!

ROMANY CREAMS

Ingredients

500 grams of butter ( room temperature )
1 cup of caster sugar
1/4 cup of icing sugar
1/4 cup of oil
1 egg
1 tablespoon of vanilla essence
4 cups of cake flour
1 tsp baking powder
125 grams of cocoa powder
2 cups of medium dessicated coconut .

450 grams plain chocolate, melted in a bowl in a microwave for 2 minutes.

Method

In a large bowl w with electric mixer, butter, oil, icing sugar and caster sugar till light and fluffy, about 3 to 4 minutes . Next , add the egg and vanilla essence and mix for a minute - now add all the dry ingredients and mix by hand to form a soft dough. Cling wrap and chill in the fridge for 20 minutes.

Preheat oven to 180Ā°C. Roll out dough on a well floured surface and ensure that your rolling pin is floured as well or simply place some cling film or wax paper over dough and roll out . Take a fork and run lightly over dough , scraping to form the rugged look . Cut out shapes šŸ« with cookie cutter and place on greased baking sheet , bake for 12 to 15 minutes .

When cooled turn the biscuits up side down , so if you baked 50 biscuits , only turn around 25 biscuits . Allow the melted chocolate to cool down for 10 to 15 minutes. Spoon the chocolate on top of the biscuit and wait for the chocolate to half set a bit before lightly placing the top biscuit . Press gently .

Allow Chocolate to set and pack away in a air tight container till ready to serve ...

Tip - Make a strawberry infused Romany cream biscuit by adding Strawberry lindt chocolate

I also adjusted the recipe to make a larger amount of biscuits. The amount also depends on the size of your cookie cutter as well .

How to make Cheddar Cheese Quick Bread
Ingredients:
2 cups all-purpose flour
4 teaspoon baking powder
1 tablespoon sugar
1 1/2 teaspoon garlic powder
1/2 teaspoon salt
1 1/2 cups shredded cheddar
1 cup milk
1 large egg
2 tablespoon butter
Instructions:
Preheat oven to 350Ā° Grease/spray a loaf pan.
In a large mixing bowl, whisk together flour, baking powder, sugar, garlic powder and salt. Stir in shredded cheese. Set aside.
In a separate bowl, whisk together milk, egg & butter.
Add liquid ingredients to bowl of dry ingredients. Stir until just combined. Do not over mix.
Spoon/pour into loaf pan.
Bake for 45-50 minutes. Top should be a golden brown.
Cool on wire rack. Remove loaf from pan, slice & serve.

Crustless Spinach Quiche

TOTAL TIME: Prep: 25 min. Bake: 40 min.YIELD: 8 servings.

I served this crustless quiche at a church lunch, and I had to laugh when one guy told me how much he disliked vegetables. Many people were surprised by how much they loved this veggie-filled quiche recipeā€”and he was one of them! ā€”Melinda Calverley, Janesville, Wisconsin

Ingredients

1 cup chopped onion

1 cup sliced fresh mushrooms

1 tablespoon canola oil

1 package (10 ounces) frozen chopped spinach, thawed and well drained

2/3 cup finely chopped fully cooked ham

5 large eggs

3 cups shredded Muenster or Monterey Jack cheese

1/8 teaspoon pepper

Directions

1. In a large skillet, saute onion and mushrooms in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese
add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake at 350Ā° for 40-45 minutes or until a knife inserted in center comes out clean.
