A client asked us to do their wedding catering for 10 guests in Camps Bay
We said YES...

Starting the evening off with canapes and bubbles🍾
- Smoked salmon and herb sour cream on melba
- Brie and cranberry jam with walnuts on puff pastry

Then sitting down for a 4 course dinner 🍽
1st: Mozzarella stuffed truffle and mushroom arancini with garlic mayo, parmesan and fried basil

2nd: Poached fish, pea purée, broccoli crumb, pickled fennel, toasted almonds, beurre blanc

3rd: Shredded lamb shoulder, miso glaze, grilled aubergine, carrot puree, crispy onions, onion petals, chive oil

4th: Classic creme brulee with fresh berries

We love a challenge so we also agreed to do their wedding cake. 🎂
- Carrot cake with buttercream frosting topped with fresh raspberries

Small weddings have become one of our favorite type of dinners to cater for, it's intimate and one of the most special days in our clients lives, which we are so grateful to be apart of.

CHEFS TIP:
If you're tired of garnishing your food with boring chopped parsley, why not try flash fried herbs instead.

Heat vegetable oil to 170 °C.
Carefully drop your herbs in the hot oil and fry for a few seconds, till crisp.
Remove and let drip on a paper towel.

This works with herbs like:
- parsley
- basil
- rosemary
- sage
- thyme
- mint

It even works with leaves such as :
- kale
- swiss chard
- cellery leaves

Temp and frying time needs to be adjusted based on the herbs you're using.

We used fried sage and cellery leaves to garnish this dish...
- spinach and leek risotto, wild mushrooms, pancetta, hung yogurt
