CHEFS TIP:
If you're tired of garnishing your food with boring chopped parsley, why not try flash fried herbs instead.
Heat vegetable oil to 170 °C.
Carefully drop your herbs in the hot oil and fry for a few seconds, till crisp.
Remove and let drip on a paper towel.
This works with herbs like:
- parsley
- basil
- rosemary
- sage
- thyme
- mint
It even works with leaves such as :
- kale
- swiss chard
- cellery leaves
Temp and frying time needs to be adjusted based on the herbs you're using.
We used fried sage and cellery leaves to garnish this dish...
